Low FODMAP Shrimp Tacos with Green Enchilada Sauce Tag a taco lover in your life *Ingredients*... 1 tablespoon Olive Oil 1 medium green bell pepper, cored and finely diced 1 pound (455 g) large 28 to 30 count shrimp, shelled and deveined 1/2 teaspoon Taco Seasoning cup (120 ml) Fody Green Enchilada Sauce (NOW IN STORE ) 12 (6-inch/15 cm) soft corn tortillas or hard corn taco shells, warmed 4 ounces (115 g) crumbled feta cheese 4 small red radishes, trimmed and thinly sliced crosswise Cilantro leaves *Directions* Heat oil in a large nonstick skillet over medium heat until shimmering. Add diced peppers and sauté for a few minutes or until just beginning to soften. Add shrimp, sprinkle with Taco Seasoning and stir to coat. Sauté for about 30 seconds, then add the Fody Green Enchilada Sauce and continue to sauté just until shrimp are cooked through. Divide shrimp in green enchilada sauce amongst tortillas or taco shells, garnish with cheese, radishes and cilantro leaves and serve immediately.

This is one of my all time favourite SFL recipes. And you can substitute turkey for chicken. It’s truly delicious!! If you happen to make it, please post your photos below so we can see ( ) 1 pounds boneless skinless chicken (or turkey) ... 2 tbsp SFL olive oil 1 cup organic heavy cream cup organic chicken broth 1 clove minced garlic 1 tsp Italian seasoning cup Parmesan cheese 1 cup spinach, chopped cup sun-dried tomatoes, drained of most oil, roughly chopped In a large skillet add olive oil, heat to allow chicken to sear. Cook chicken on medium heat for 5-8 minutes or until no longer pink in center. Remove chicken and set aside. Add garlic and sauté 2-3 minutes, stirring constantly. Add heavy cream, chicken broth, garlic, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer just until the spinach starts to wilt. Creamy Mediterranean Pasta *Ingredients* 8 ounces Chickapea pasta, penne (available in store!) 1 cup grape tomatoes, cut in half... 1/4 red onion, thinly sliced 1/2 orange pepper, quartered 1/2 cup kalamata olives, diced 2 cups spinach, packed 1/4 cup fresh basil, finely chopped 1/4 cup plain hummus salt & pepper, to taste *Instructions* Preheat oven to 400F. Line a baking sheet with parchment paper and add tomatoes, red onion, and orange pepper with olive oil, salt & pepper. Roast for 15 minutes. While the veg is roasting, bring a pot of salted water to a boil. Add in Chickapea pasta and cook as per box instructions. Remove pan from oven and dice red onion and pepper into smaller pieces. Add to a separate pan with olives, spinach, pasta, fresh basil & hummus. Over medium heat stir consistently until pasta is fully coated with hummus and creamy! Add in tomatoes and basil. Season with more salt & pepper, if needed. Enjoy! Tag a friend you want to make you this recipe
