Comfort food for the coming storm. Beef Barley Soup INGREDIENTS... 1 lb. extra lean cut beef cubes 1 tsp oil 8 cups water 2 yellow onions, chopped 1-28oz can diced tomatoes 1 tsp salt 3/4 tsp fresh ground black pepper 3/4 cup barley 1 cup mushrooms sliced 1/2 medium bunch broccoli; chopped 1/2 tsp thyme leaves optional: stalk of celery DIRECTIONS Heat oil in dutch oven and brown onions 6-7 minutes. Add beef cubes and brown 5-6 minutes more. Add water, tomatoes, salt, pepper. Bring to boil, reduce heat and simmer covered for one hour, stirring occasionally. Add barley and bring to boil. Reduce heat and simmer covered for 40 minutes. Add broccoli, mushrooms and thyme. Simmer covered for another 40 minutes. #simplyforlife #healthylifestyle #recipe #storm
