Thanksgiving Day has been celebrated for a variety of reasons in Canada, but at its heart, it's all about gratitude. Have a smaller family or just don’t like turkey? Try this lovely slow cooker chicken. Slow Cooking Herbed Chicken INGREDIENTS... 2 carrots, cut in chunks 2 celery stalks 1 small onion 1 large whole chicken 1 apple, chopped 3 - 4 cloves garlic 1 tsp chili powder 1/2 cup organic chicken broth Herbs of choice Salt and freshly ground pepper to taste DIRECTIONS Cut carrots, celery and onion into large chunks and line bottom of slow cooker. Pour chicken broth ove the vegetables. Rinse chicken, pat dry, and stuff with garlic cloves and apple pieces. Season all over with salt, pepper, chili powder and herbs of choice. Place chicken on top of vegetables. Cover and cook on low for 6 - 8 hours, or until chicken is tender.
Here’s a delicious way to reduce the amount of carbs you consume this weekend. Fake Garlic Mashed Potatoes (Cauliflower) INGREDIENTS... 1 medium head cauliflower 1 tbsp cream cheese, softened 1/4 cup grated Parmesan 2 cloves minced garlic 1/2 tsp salt 1/8 tsp freshly ground black pepper 1/2 tsp chopped fresh or dry chives, for garnish (optional) 2 tsp Ghee / organic butter (optional) DIRECTIONS Set a stockpot of water to boil over high heat. Clean and cut cauliflower into small pieces. Cook in boiling water for about 10 -12 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels. In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, salt and pepper until almost smooth. Garnish with chives, and serve hot with organic butter/ghee.

Ohhhh Emmm Geeeeeee! Baked Apples with Maple Yogurt Sauce INGREDIENTS... 4 apples 14 cup maple syrup 14 cup crushed walnuts 2 tsp cinnamon 12 tsp nutmeg 34 cup plain Greek yogurt 2 tbsp maple syrup DIRECTIONS Core apples; remove top inch of peel. Make a shallow cut through skin around centre of each apple to prevent skin from bursting. Place apples upright in baking dish or pie plate. In small bowl, combine maple syrup, walnuts, cinnamon and nutmeg; spoon into centers of each apple. Add water to cover bottom of dish. Bake, uncovered, in 375F oven for 25 to 30 minutes for less firm apples, and up to 50 minutes for firm varieties, or until apples are tender when pierced with toothpick.
