Thanksgiving is just about here and who doesn't love dressing?! Try our healthy spin on this stuffing recipe for some incredible flavour that is sure to leave everyone salivating!! APPLE & SAUSAGE STUFFING... 2 tbsp olive oil 1 lb SFL sausages 1 cup diced celery 1 cup diced onion 1 cup diced peeled cored apple 2 garlic cloves, minced 1 tbsp chopped fresh parsley 2 tsp minced fresh sage 1 bay leaf 8 cup 1-inch cubes French bread with crusts (from 1-pound loaf) 1 cup whole milk 1 cup organic chicken broth 2 tbsp organic butter, melted 3 large eggs, beaten Heat oil in large skillet over medium heat. Add sausage; saute until cooked through and brown, breaking into pieces with spoon, about 8 minutes. Using slotted spoon, transfer sausage to large bowl. Add celery and next 6 ingredients to drippings in skillet. Saute over medium heat until vegetables are soft, about 5 minutes. Discard bay leaf. Add mixture to sausage. *Make ahead: Can be made one day ahead. Cover; chill. Reheat to lukewarm before continuing. Preheat oven to 350F. Butter 13x9x2-inch glass baking dish. Add bread to sausage mixture. Whisk milk, broth, and butter in bowl to blend. Mix into stuffing; season stuffing with salt and pepper. Mix in eggs; transfer to prepared dish. Bake uncovered until cooked through and brown, about 50 minutes. See more

Feeling pumpkin'ish these days? Try this spin on energy bites- Dark Chocolate Pumpkin Balls! Ingredients... 1/2 cup cashews 1/2 cup walnuts 3/4 cup oats 5 medjool dates 4 tbsp pumpkin puree (not pumpkin pie filling!) 2 tsp vanilla 1/2 tsp ginger 1/2 tsp nutmeg 1 tsp cinnamon pinch of cloves 2 tbsp organic honey 1 cup melted 70-90% dark chocolate for dipping balls inch Instructions Blend the cashews, walnuts, and oats up into a fine powder in the food processor. Add the rest of the ingredients and blend until they form a moist, dense mixture. Form mixture into balls and store in freezer. Melt dark chocolate, remove balls from freezer, dip in dark chocolate and refrigerate until serving time!

Want a LOW CARB stuffing for the weekend? Look no further! Cauliflower Stuffing 4 tbsp organic butter... 1 onion, chopped 2 large carrots, peeled and chopped 2 celery stalks, chopped 1 small head cauliflower, chopped 1 cup chopped mushrooms Salt and pepper to taste 1/4 cup chopped fresh parsley 2 tbsp chopped fresh rosemary 1 tbsp chopped fresh sage 1/2 cup vegetable or chicken broth In a large skillet over medium heat, melt butter. Add onion, carrot, and celery and sauté until soft, 7 to 8 minutes. Add cauliflower and mushrooms and season with salt and pepper. Cook until tender, 8 to 10 minutes more. Add parsley, rosemary, and sage and stir until combined, then pour over vegetable broth and cover with a lid. Cover until totally tender and liquid is absorbed, 15 minutes. Serve!

Roasted Sweet Potato anyone? 2 lbs of sweet potato 1 tbsp olive oil 12 tbsp fresh or dried rosemary 1/8 freshly ground black pepper... Preheat oven to 375 degrees F. Peel the potatoes and cut into 1 inch cubes. Microwave on high for 6 minutes until the outside begins to soften. Drain any liquid from the potatoes. Transfer to the baking pan. Brush the potatoes with olive oil and sprinkle with rosemary and pepper. Bake for 25 minutes or until tender. Serve immediately.
