Valentines REcipe#2: Slow Cooker Fajita Bowl Ingredients:... For the marinade: 4 boneless, skinless chicken breasts 1/2 cup oil 2 tbsp red wine vinegar Juice of 1 lime 1 tsp garlic powder Vegetables and Spices: 2 medium onions, sliced thin 2 green bell peppers, sliced thin 2 red bell peppers, sliced thin 2 tsp garlic powder 2 tsp ground cumin 1 (15.5 ounce) jar organic salsa Toppings (optional): Organic Sour Cream Chopped Cilantro Chopped Avocado Lime wedges, for spritzing Shredded Cheddar cheese Directions: Place chicken in a baking dish. Whisk olive oil, red wine vinegar, lime juice and garlic powder in a small bowl. Pour olive oil mixture over the chicken. Cover and place in the fridge to marinate overnight. The next morning, place onions and bell peppers in the bottom of a slow cooker. Sprinkle the powdered garlic and cumin over the vegetables. Place the chicken on top of the vegetables and pour marinade over it all. Pour the salsa evenly over the chicken. Put the lid on, and cook on low for 7-8 hours until chicken is cooked through and fork tender. Remove chicken and shred. Serve chicken with peppers and toppings. Your Valentines Recipe of the week: Sweet & Spicy Pineapple Shrimp Skewers Ingredients 1/2 cup coconut milk... 4 tsp hot sauce 2 tsp organic soy sauce 1/4 cup freshly squeezed orange juice 1/4 cup freshly squeezed lime juice (about 2 limes) 1 pound large (30 - 40) Shrimp, peeled and deveined 3/4 pound 1 inch-cut pineapple chunks Oil for grilling Freshly chopped cilantro and/or green onion for serving Skewers Directions In a medium bowl, combine the coconut milk, hot sauce, soy sauce, orange juice and lime juice. Add the shrimp and toss to coat. Cover and place in the refrigerator to marinate for 1-2 hours, tossing occasionally. If using wooden skewers, soak in warm water while the shrimp marinates. Preheat the grill to medium high heat. Remove the shrimp from the marinade and reserve the marinade for grilling. Thread the shrimp onto skewers, alternating with the pineapple. Lightly brush the grill with oil, and then place the shrimp skewers on the grill. Grill the shrimp for 3 minutes, brushing with the marinade, then turn and cook for an additional 2-3 minutes, brushing with the marinade again, until the shrimp are just cooked through. Remove to a serving plate and garnish with cilantro and green onion.Serve hot. #simplyforlifewoodstock ##recipeoftheweek

Blueberry Tea Muffins Ingredients... 3/4 cup flour 1/4 tsp salt 2 tsp baking powder 1/4 tsp cinnamon 1 cup bran flakes 1 cup blueberries 1 egg white 1/2 cup water 1 tbsp organic honey 1 tbsp yogurt Instructions Instructions Mix all ingredients together in bowl. It is officially fall! Are you craving warm comfort foods? Listen to your body. There are lots of healthy fall foods. Do you have an Instapot which has been taking up space over the summer? This weekend why not pull it out and try out a new recipe like Lentil Soup with Sausage and Kale? Lentils are often overlooked, but are an inexpensive way of getting a wide range of nutrients. They are high in fibre, one cup provides approximately 16 g of fibre which accounts for more than... half of the daily recommendation for women. They are also a great source of protein, and are packed with B vitamins, Magnesium, Zinc and Potassium. Instant Pot Lentil Soup with Sausage and Kale Cook Time: 12 mins / Total Time: 20-30 mins Servings: 6-8 1 lb bulk mild Italian sausage 1 medium yellow onion diced 2 celery stalks thinly sliced 2 cloves garlic, minced 4 cups bone broth or chicken stock 2 cups dried lentils 1 tsp red pepper flakes 1 can (28 ounce per can) crushed tomatoes 4 cups baby kale leaves, loosely packed 1 tsp red wine vinegar Salt and pepper to taste 1/4 cup chopped fresh parsley Hit saute button on Instant Pot. Add sausage and cook until meat crumbles and begins to brown, about 5 minutes. Add onion, celery and garlic and cook until softened, about 5 minutes. Add stock, lentils, red pepper flakes, tomatoes and stir. Place lid on Instant Pot and make sure the release valve is in the sealing position. Press manual button and set timer for 12 minutes. The Instant Pot will warm up for about 10 minutes and then start cooking. After 12 minutes, quick-release by flipping the release valve to venting. Add kale and vinegar. Stir to combine and season with salt and pepper, to taste. Sprinkle with chopped parsley before serving.

Ingredients 3 cups turkey or chicken breasts; cooked and chopped 3 stalks celery chopped 1 chopped onion 1 tsp. oil 2 tbsp. flour salt and pepper to taste 1 tsp. dried thyme 5 cups organic chicken broth 2 carrots chopped 1 cup zucchini sliced 1/2 cup unsweetened apple juice Instructions Saute the onion and celery in the oil. Add the flour, salt, pepper and thyme. Slowly add the broth. Add the carrots; cover and simmer for about 20 minutes or until the vegetables are tender. Add the zucchini, apple juice, and turkey or chicken. Cook for another 10 to 15 minutes on low heat. #simplyforlifewoodstock #sflrecipes

Simply For Life Keto Coffee Ingredients 1 cup organic coffee 1 tbsp organic butter... 2 tbsp heavy cream or 1 tbsp coconut butter 1 tbsp coconut oil or 1 tbsp MCT oil Cinnamon Instructions Brew your coffee. Add heavy cream or coconut butter to blender. Pour coffee into blender and add your butter or ghee, coconut oil or MCT oil and cinnamon. Once everything is in the blender, blend until frothy! **Some people like to add some collagen to their coffee, so 1 tbsp is okay to add. Apple Pita Pie Ingredients 1 large apple peeled... 1 tsp pure maple syrup 1/2 tsp cinnamon 1/4 tsp cornstarch organic 1 oz cheese of choice 1 Pita Instructions Preheat oven to 350 F. Spread goat cheese over pita. Slice apples and toss with remaining ingredients, arrange apples on pita and bake 10 minutes uncovered and then loosely cover with tin foil and bake another 15 minutes. Got turkey leftovers but can't eat another bite? Don't throw it in the freezer to forget about it until spring, make it into chili! Shredded Turkey Chili 2 tablespoons Simply For Life Olive Oil 2 cups chopped onion... 1 cup chopped green bell pepper 4 garlic cloves, chopped fine 2 tablespoons chili powder (or up to 4 tablespoons if you like it spicier) 1 tablespoon ground cumin 3 15-oz cans crushed tomatoes 1 tablespoon tomato paste 1 cup turkey stock or chicken stock 2 15-oz cans kidney beans, drained 1 teaspoon dried oregano 1 tablespoon Himalayan Salt 1/2 teaspoon black pepper 3 to 4 cups shredded, cooked turkey meat Sauté the vegetables: In a large, 8-quart, thick-bottom pot, heat the olive oil on medium high heat. Add the onions and green peppers and cook, stirring, until golden, about 5 minutes. Add the garlic, chili powder, and cumin, and cook, stirring, for a minute or two more. Add a bit more olive oil if needed. Add the remaining chili ingredients: Add tomatoes, tomato paste, stock, kidney beans, oregano, salt, pepper, and cooked turkey meat. Bring mixture to a simmer and reduce heat to low. Simmer, partially covered, for an hour. Taste and season: Salt to taste. The chili can be made 2 days in advance, or frozen for 2 months.
