SpecialTea Occasions 02.03.2021

Christmas baking is one of my favourite things to do. Going through magazines, Pinterest and various files from years past for inspiration. My Mom always said a plate of baking should be pretty as well as tasty and include something for everyone. This year was extra busy so only had time for a limited amount of trays for customers. Xmas 2021 will be bigger. As always, thanks to all that ordered and supported this little tea and baking company in the past crazy year.

We’re terrible at these group photos but we couldn’t stop laughing and while it’s difficult days during covid we decided to stick with the staycation plans we made for Christmas many months back. We’re so fortunate to have this local gem just 20 mins up the hill. The staff went out of their way to make everyone feel safe and cared about. Thank you so much and we are planning to come back very soon! @vancecreekhotel made us feel so at home and cozy! We even got to take a few laps at Brewers Pond on Xmas day! @silverstarmtnresort

Winter Picnic at Silver Star. We were pretty darn lucky to sample some tasty treats with our mountain coffee break....(quite possibly) The World’s Best Cinnamon Buns, insanely good Chocolate Lava Cake, Salted Caramel Cheesecake, luscious and delicious custard in a perfect Vanilla Slice and amazing lemony Limoncello Mini Cannoli. Not sure how we managed that after Christmas treats but we sure made a good effort. @bugaboos.bakery.cafe we you! 2 days in a row lol @silverstarmtnresort the champagne powder is unbeatable!

Hazelnut Torte topped with bright green kiwi fruit. This is an easy and fun cake to assemble. Ground hazelnuts act as the glue or structure of the torte that’s baked in a jelly roll pan. Horizontal strips of delicate cake are covered with whipped cream and rolled in a spiral - this creates the vertical cake in the slices. The official baking reviewers (3 sons) gave it a 5 spatula grade. @amanda13_stanley do you remember sharing this recipe with me?
