What is Seasoning Sunday? Ever find yourself too squeezed for time to cook the way you’d like to during the week? We’ve been there many times.... That’s why I’ve started dedicating part of my Sundays to cooking for the entire week, particularly the protein, which can be more time consuming. I store half of it in the fridge, and freeze the other half for later in the week. Then we just add a salad/veggies/potatoes/bread to cut down on cooking time for meals during the week. I often vary up the seasonings on different pieces of meat to give our food more variety throughout the week (who wants to eat the exact same chicken all week?) Enter Seasoning Sunday. ? It’s not hot, it's too mild. I've heard this a couple of times in this business.... Let’s clarify: what is Chili powder? Ancho, chipotle, guajillo, pasilla, cayenne, Aleppo, and the list can go on; any ground, dry chili is a chili powder. The most common is unaltered dry pulverized Indian chilies, usually a cayenne pepper variety. There is also the Mexican style of chili powder that in fact is a blend where you add cumin, garlic, onion, oregano, among others spices. As a result of the many variations, it is up to the cook to be clear on what they want to achieve with the addition of chili powder to their recipe. With this information, your spice supplier will be better suited to help you find the right chili for you. The range can go from Kashmiri chili from India, a mild chili that adds a nice bright red color to a ghost pepper where you are basically looking to just add heat.
