Is there anything easier than a casserole?? I have been buying some amazing ‘Simply Green Soup’ from @Costco and had some inspiration to play around with ...it to create a spicy casserole this soup is packed with nutrients and very low in additives! In a large casserole dish combine: -1 cup brown rice -1 sliced green pepper -1 sliced yellow pepper -I package of riced cauliflower -2 small zucchinis, sliced -1/2 chopped white onion -garlic (of course) -sprinkle of curry and cumin powder (optional) -1 can of Simply Green Soup -1/2 jar of green curry paste (carefully, depending on the brand you get these can be SPICYYY, so adjust accordingly) -4 raw chicken breast, sliced -about 3 cups of low sodium chicken or vegetable broth Cover casserole dish with foil and bake at 400F for about 90 minutes. I like to bake my casseroles with a cookie sheet under it incase it bubbles over!
