Who want’s to pretend it’s summer with me??? Well, I can’t think of a better way than with summer food aka Potato Salad. This warm version with peppers and bacon is the perfect way to infuse a little sunshine into any day of the week - especially Mondays! Check out the link in my bio for the full recipe. : : Warm Potato Salad with Bacon + Peppers :... : 1.5 lbs multi coloured baby potatoes 1 red pepper sliced 1/2 white onion chopped 4 strips of bacon 2 cloves garlic thinly sliced 1/4 cup olive oil 1 tbsp mustard 1 tsp red wine vinegar 1/2 tsp garlic powder 1 tsp salt 1/2 tsp pepper 2 green onions Fill a large pot with water, salt liberally, then add in the potatoes. Bring to a boil then reduce heat and simmer for 10 minutes or until the potatoes are fork-tender. While the potatoes are cooking place the bacon in a medium skillet and cook until crispy, then transfer to a paper towel-lined plate, then drain off any excess grease. To the pan add in the onions and cook until they are translucent then add in the peppers and cook another 4 minutes or until tender. Add in the sliced garlic and cook another 1 minute, crumble in the bacon and remove from the heat. In a small bowl combine olive oil, mustard, salt, pepper, garlic powder and red wine vinegar. Once the potatoes are fork-tender drain out the water, then add in the vegetables.
