Recipe Rhubarb Upside Down Cake Makes 1 cake using a medium square cake pan 8x8 inch INGREDIENTS 2 cups rhubarb, chopped (or fruit of your choice) 2 Tbsp tapioca (small size), crushed if preferred (or use cornstarch instead) 1 egg cup water cup sugar White cake batter (see below for ingredients) White Cake 2 cups flour 4 tsp baking powder tsp salt 1 cups sugar 1/2 cup margarine (or butter), melted 1 cup water 3 eggs 1 tsp vanilla essence INSTRUCTIONS Pre-heat oven to 350F Add chopped rhubarb to the ungreased cake pan. Cover until pan is about full. Make paste. Mix together crushed tapioca, egg, sugar and water. Drizzle over the rhubarb. Set aside. Make white cake batter. Mix dry ingredients together. Mix flour, baking powder, salt and sugar in large bowl. Set aside. Mix wet ingredients together. Mix melted margarine, water, eggs and vanilla. Gradually add dry ingredients to the wet ingredients. Mix until just combined. Drizzle white cake batter over the rhubarb until evenly coated. Bake for 45 minutes in pre-heated oven (350F) to bake for 10-15 mins, until batter is cooked through and golden brown on top. Remove from oven (be careful to use oven mitts as it will be hot!), let cool on cooling rack. Cut into slices and serve immediately Serving suggestion delicious with ice cream or whipped cream To celebrate our Fall virtual program: "Cooking with Kids" we are hosting a Kids Kitchen Challenge!
