Good Day, It took me a few days from last Thursday to reflect on everything that has happened the last year and on our last two dinner services. It was sad to take out the last entree of Spruce on Wellington but also a feeling of happiness of what’s to come. From the bottom of my heart thank you to everyone who came out and celebrated Spruce and for all of the support you have given me.Thank you to my staff for what you did for myself and my restaurant and I wish you nothing ...but the best and all the success in the world. The lights might be off on Spruce on Wellington but they’re back on for The In Home Chef. We will be re-launching for the middle of April and make sure to follow The In Home Chef and to get onto our mailing list for updates to our cooking class schedule, pop up dinners, our retail section and our caterings. Thank you once again and hope to see you all here sometime soon. Thomas

As I am typing this, there is a smile on my face. This post is to let you all know, that I am closing my restaurant Spruce on Wellington. This should've been a hard decision but it wasn't because I am doing this on my own accord and I am doing it for me, and no one else. This past year and a bit has been eye opening to say the least. I have learned so many things which were good and bad and it has changed me as a person. My health hasn't been the best for years now but it... has declined over the past year, I've lost the closeness of friendships and I've lost the passion I once had. Owning a business (especially a Restaurant) takes a lot out of you as a person. I would never go back and change opening a restaurant because it has made me who I am today and has made me appreciate what I had before, and what I want back. The people that helped me get to where i am, past and present, I thank you. To my customers who have came and dined with us and experienced what I offered, I thank you for the support you've shown me and I hope that continues with the new direction I am going... I am going back to what truly made me happy and allowed me to express who I was, and show people what I can do. I am making Spruce on Wellington into the headquarters for my catering company, The In Home Chef. I started the catering company years ago as an outlet to express who I am and to offer something that really wasn't around. I had a conversation with a good friend a while ago, who said to me, "why can't we be the best fucking caterers around and be happy with that" . I've thought about that for a long time, why can't I just be a great Chef and Caterer and be happy with that. So that's what I am doing, I am turning one business into the other where we will offer cooking classes, pop up dinners, and a private dining room for renting and catering. For the people who know me, they know what The In Home Chef means to me and they know what it's all about. I feel alive for the first time in a long time and I can't wait to see what the future holds. I hope everyone understands why I have decided to do this, as I am doing this to create a life for myself, to fall into love once again for my craft and to be healthy. I hope you all continue to support me in this venture as you have over the years, which I thank you for. We will be having our last dinner service next Thursday, March 29th, with a 5 course dinner and two seating’s. I want this evening not to be a sad one but to celebrate what Spruce on Wellington was and what The In Home Chef is going to be! I saw this saying the other day and I will leave it with you all; "We have to do with the past only as we can make it useful to the present and to the future"
