Our schedule has changed many times this fall already, and I was having such a hard time getting into routine with lunches for myself and would often grab something quick, uninspired, and likely not all that healthy. My friend reminded me of a meal I love to eat, so I have been prepping a few of them each week so there's something in the fridge ready-to-go for lunches.
