It's a windy prairie day here in Alberta so I decided to get some meal prep in. While I was doing my workout I roasted some veggies. I'm not very good at measuring ingredients. I'm more of a little of this and a little of that kind of cook Here is my sort of recipe for roasted butternut squash soup. 1 butternut squash, 1 red and 1 orange pepper, 2 small to medium sized onions, and I put about 5 cloves of garlic (I love garlic!), drizzle with olive oil, lots of pepper and a bit of salt. Bake in the oven for 45-60 min at 400. Put in food processor or blender. Add veggie stock and I put about 1TBS of nutritional yeast in. Make it as thick or thin as you like. This soup freezes great for those days when you just don't want to make lunch:) Yes it might look like baby food but taste great!

I was so excited when I got two parcel notices in the mail today! It's like Christmas, but with out the snow haha. Tonight was such a beautiful night that I decided to head out for a walk. The air was a bit crisp so I put on 4 light layers. We'll have 2km I decided, forget walking, I'm gonna run! Well then I got too hot! I did tie one layer around my waist and put my gloves in my pocket. But still too hot. Oh well, I managed to sweat my way through 3km of running. Now time to relax with some lavender in my new diffuser #notthefastestrunner #fallisintheair #younglivingoils #gonnasleepwelltonight

I haven't gone for a run in about a month! It was so nice out so I decided to lace up and head out for a 5k. Well that 5 turned into a 10k! I might regret it tomorrow but it felt so good to just go out and run. #fallisintheair #notthefastestrunner #justkeeptrying #lovethissmalltown

Made these yummy brownies with my girls today:) I made my own almond flour by blending 1/2 cup of almonds to my food processing. Don't blend it too much or else you might end up with almond butter I then added the rest of the ingredients. I used chocolate almond milk, avocado oil instead of canola oil, and 2 tablespoons of chia seeds with 4-5 tablespoons of water instead of eggs. For the icing and chocolate glaze I used melted coconut oil. Oh and I used Enjoy Life chocolate chips(soy, dairy and but free:) We will definitely be making these again https://www.drinksilk.ca/reci/chocolate-peppermint-brownies
