Have you noticed that the evenings temperatures are so comfy now? The beginning of a new season is fast approaching and with it new offerings from local farmers. This is a new one for us, I would like to introduce you to Mashed Potato Squash. I ate my first one ever for lunch today and loved it. If you swipe and read through this post you can see what I did. I removed the stem and cut the squash in half lengthwise, then scooped out the seeds, I drizzled the squash halves w...ith olive oil and salted and peppered them. I then placed them face down on a parchment-lined cooking sheet and cooked for 1 hour in a 350-degree oven. I then scooped out the flesh and put it in a bowl. I wanted to be able to taste what the squash was like on its own before I introduced anything flavourful, so I just added salt, pepper and a bit of butter and mixed with a fork. The consistency was just like mashed potatoes and the flavour was sweeter and a tiny bit squash like but barely . Happy that I knew I didnt mind it I then added a spoonful of cream cheese, some dried chives, garlic powder and crumbled bacon and then proceeded to eat it all myself. I am sadly a very picky eater and hate most veggies but this was so good .
