Here is a quick and deliciously easy holiday appetizer that can be made the day ahead and sliced just before serving. Cranberry Pinwheels 1 brick (250 g) cream cheese, softened 1/3 jar Pineapple Jalapeno Jelly... 1 cup dried cranberries 3 or 4 large original tortilla shells Mix cream cheese with Pineapple Jalapeno Jelly, mix well and stir in cranberries until evenly distributed. Spread mixture on tortilla shells, roll tightly and wrap in plastic wrap. Refrigerate for several hours or overnight and cut into pinwheels just prior to serving. Garnish with fresh rosemary (optional).

Chicken and Peach Quesadilla 1 boneless, skinless chicken breast, fully cooked and diced 1 Tbsp. vegetable oil... 1 Tbsp. butter 4 large flour tortillas 1-2 peaches, peeled and sliced 2 cups sharp white cheddar cheese, shredded Garlic Pepper with a Twist of Lime Peachy Onion Hot Sauce Chopped cilantro (optional) Peach & Mango Habanero Salsa or Chipotle Black Bean & Corn Salsa (optional) Sour Cream (optional) Lay two tortillas on your work area. Divide filling evenly and spread on the 2 tortilla shells. Sprinkle with Garlic Pepper with a Twist of Lime. Heat oil/butter in a large skillet. Cook quesadillas for 2 minutes until golden, flip and cook other side until golden. Slice each tortilla into wedges, drizzle with Peachy Onion Hot Sauce and serve with salsa and sour cream. These are also when excellent cooked on a foil sheet on the BBQ.
