Since shifting my beef farming away from ‘grass-fed’ to regenerative agriculture, I’m getting some questions about the difference. And here it is: feeding animals grass can be harmful to soil if you aren’t lovin’ on the land that the grass grows upon. When cattle are not managed in proper relation to the grass, soil microorganisms will become depleted and die. It’s simple and straightforward: sick soil= sick grass=sick beef=sick humans. Soil health is directly connected to ou...r own: when I was born, tomatoes had 3 times the nutrients than the tomatoes in the grocery store today. Obesity isn’t about over-eating, it’s about being chronically hungry for nutrients that can’t be found in the food that is available. And this nutrient loss is traceable right back to the soil. A&W is now claiming they’re selling grass-fed beef. Welcome to Steak School! Today we’ll be talking T-bones. First, let’s get the butchering basics out of the way. What’s a T-bone? Actually the T-Bone is comprised of two different steaks attached to the T shaped bone. On the long side is the strip. On the smaller side of the T-bone is the tenderloin. What’s the best way to cook a T-bone? T-bones are tender cuts so you can bbq or pan fry with great success. Be sure to have your heat higher than you might if you were cook...ing a tougher cut. Here’s a fantastically straightforward and delicious recipe for you: sear generously in garlic butter on both sides, medium-high. Add salt and ground pepper and you are ready to go.
