May Long Weekend It’s hard to believe that the May long weekend is here! Are you planning on firing up your BBQ this weekend? If so, I have an awesome BBQ sauce recipe for you! Maple Syrup BBQ Sauce... 3/4 cup Maple Creek Farm Maple Syrup 1 cup Ketchup 1 cup finely chopped onion 1/4 cup brown sugar 1/4 cup lemon juice 2 tbsp Worcestershire sauce 1/4 cup water 1/2 tsp salt 2 tbsp garlic finely chopped or crushed 1/2 tsp coriander 1-2 tbsp chilli powder 1. Combine all ingredients in medium saucepan. Bring to a boil and simmer for 15 to 30 minutes, uncovered. 2. Cool. Store, covered in refrigerator for up to 1 month. This BBQ sauce is amazing on baby back ribs, or to garnish any meat that has been grilled! Maple Creek Farm has maple syrup to add to all you cooking and baking needs! TGIF! The days have been busy here at Maple Creek Farm! Not only have we been closing up our maple syrup equipment but we have been closely watching our tiny herd of beef cows get ready to calve! With both our children being home from school, this has been an extra chore for them! There is always a feeling of excitement with spring, and the brith of new baby calves at our place! Growing up on a dairy farm, I have so many memories of watching and waiting for new baby cal...ves to be born. I’m so happy that our children get to experience the same! The debate in our family is always on picking a name for our new addition! This little heifer calf is pretty sweet and timid, but strong and mighty all the same! I’m partial to the name Maple for her , but we would love to hear your suggestions! Please comment below if you any name suggestions for us! Have a great weekend! Happy Saturday Our 2020 Maple Syrup season has now come to an end! The sap was plentiful this year allowing us to produce more quality maple syrup than we could have imagined. We are always a little sad when maple syrup season has come to an end. My mom had this pillow made for Adrian a few years ago for his birthday, and in our family this saying couldn’t be more true! Throwback Thursday In true #throwbackthursday fashion, I had to post this picture. This picture was taken our very first year that we tapped our maple trees 10 years ago. We were the very proud parents of a 4 month old baby, and a very busy 3 year old! We put in a 100 taps that year, and thought we had this maple syrup thing all figured out! Little did we know, 10 years later we would be putting 3000 taps in our maple trees and making our dreams of a maple syrup business come true! This picture reminds me of how fast time goes, and how much our children have grown. It proves to us how precious time is, and how important it is to cherish time spent together . We are proud to be producing maple syrup as a family for you and look forward to making more family memories like this picture in our sugar bush for years to come.

New Recipe Alert I am always looking for new recipes to use our Maple Creek Farm maple syrup in. I love taking the time to look through a new cook book, and flag recipes that I think my family will enjoy. I came across this maple curried chicken recipe, and thought it would be a hit...and well it was! Not only does this recipe highlight a buttery maple sauce, it also has a subtle curry flavour that makes your taste buds dance! I served this dish with side of fluffy rice, ...and a green salad with a maple balsamic dressing! Maple Curried Chicken 1 whole chicken cut up or 8 chicken thighs ( preferable without skin) 1/4 cup butter 1/4 cup Maple Creek Farm maple syrup 2 tbsp brown sugar 1 tsp maple mustard ( you can substitute with a dijon mustard) 1 tsp salt 1 tsp curry powder 1. Wash and dry your chicken ( and cut up if not using separate chicken pieces), and place in a roasting dish. 2. Mix remaining ingredients in a saucepan and cook until the butter is melted and a slow boil is reached. Pour over chicken. 3. Bake at 350 F ( or 180 C) for 1 hour. Baste frequently during the last 20 minutes. This recipe served our family of four no problem! I can't wait to try it on the BBQ! The sap is flowing The sap has been flowing like crazy out of our Maple Creek Farm maple trees! This is the first year that we have the sap coming to us! Before installing our pipeline system, we use to gather all our sap out of buckets that were hung from our trees. With our new expansion this year, all of our sap is gathered from a pipeline system, and the majority of the sap is pumped underground 800 feet to our Sugar Camp! We have many great memories of gathering sap from... buckets with our friends and family. Unfortunately, due to the situation this year with COVID-19, we have not been able to open our Sugar Camp doors, however, we have been cherishing memories of the past, and are making plans for new ones to come. Thank you once again for all your support! We wouldn't be where we are today without the help from our friends and family!

Happy Easter Sunday I will be preparing an Easter brunch with all thing’s maple for Adrian and the kids today. One of our traditional dishes for our Easter brunch is always buttermilk pancakes. A trick to making nice fluffy pancakes is to not mix your batter to early before cooking , and to not over mix it either! Here is the recipe: Erin’s Buttermilk Pancakes 2 eggs 2 cups buttermilk... 2 tbsp melted butter 11/2 cups flour 1tsp baking powder 1tsp baking soda 1tbsp sugar tsp salt 1. In a large bowl beat together egg, milk and butter. In a separate bowl whisk together all dry ingredients; pour over egg mixture and stir until almost smooth 2. Heat skillet or griddle over medium heat, brush with oil, or butter (I always use butter). Pour about cup of batter for each pancake into skillet; cook for 1-2 minutes until underside of pancake is light brown, and bubbles break the top but do not fill in. Flip pancakes and cook for 30-60 seconds longer or until underside is golden brown. Repeat with remaining batter, brushing skillet with more oil or butter as necessary. Our son Evan loves when I add chocolate chips to these pancakes. I personally love adding fresh blueberries! These pancakes are best topped with Maple Creek Farm maple syrup! Enjoy! Thank goodness for the automation of suction pumps, because you have been keeping us busy with maple syrup orders and we can’t wait to hear how some of you will be using it over the long weekend! . Here’s a quick little recipe for your Easter dinner:... Matchstick carrots, cooked stovetop.
