Looking for some salad inspo? This super simple chickpea salad is quick to prepare and perfect for making extra to enjoy all week! I love this on its own or served like a salsa with tortilla chips. . To make: chickpeas, bell pepper, cucumber, cherry tomatoes, red onion, feta cheese, parsley, olive oil, lemon juice, cumin, S+P. It’s also delicious with avocado, but what isn’t? .
