Smoked BBQ Pork Back Ribs. I did this dish specifically for Canada Day. It is a long cook but uses very little propane because you only use one burner on low for about 6 hours to maintain a temperature of 250’F. I found a great BBQ dry rub form the website #heygrillhey The ingredients are just mixed and I did that the day before. I doubled the amounts. My barbecue is on its last legs and will be replaced when they go on sale so I wasn’t too worried about getting a bit of ash in there. If that concerns you you can either put a foil tray in the bottom or vacuum it out with a shop vac.

Father’s Day Barbecue Maple Bourbon Chicken thighs. Brown sugar, black pepper, garlic powder, onion powder, celery salt, paprika, maple syrup and Jack Daniels. Chicken was on offer, $4.21 for 8. Poke with a fork whilst still in the pack (much easier) and marinate for half a day. Cook on low or indirect hear and the sugar content will make them burn. Baste 3 or 4 times. Served with corn and potato salad. It was also the longest day, summer solstice. Prep time is about 15 minutes, cook for 20. Further tips in the images.

Do you have Turkey left? Ultimate Turkey Sandwich I reckon I make the ultimate turkey sandwich. Take two slices of good, soft white bread or a roll. Spread the bottom with a mixture of the set, fat and jelly that came out of the turkey. Add slices of breast and most importantly dark meat... for succulence and flavour. Add slices of dressing, and cranberry sauce. Add salt and pepper. Spread the top slice of bread with mayonnaise. My late wife used to tell me I am not allowed more than 4 of these a year due to the saturated fat content of the 'spread', so I get two at Thanksgiving and two at Christmas! Failing that, just use the set jelly which is basically a flavourful chicken type stock.
