Also, delicate aroma compounds will be driven off and lost. If the temperature is too low, proper extraction cannot occur, and the tea will taste flat. #WesternStyleSteeping Western Style Steeping (Single Steeping) - The tea in question is usually black tea, which is steeped for three to five minutes, allowing the water to penetrate into the core of the leaf, thereby breaking down the flavour components and extracting all the flavourful goodness from the leaf in one steeping. #AsianStyleSteeping Multiple Steepings (Asian-Style Steeping). In China small unglazed clay teapots or porcelain gaiwans (thin-walled, porcelain tea-drinking cups comprised of three piecesa lid, the cup, and a saucer) are the vessels of choice for steeping all classes of tea. Likewise, Japanese, Korean, and Taiwanese tea drinkers use small unglazed clay or ceramic teapots for steeping green, oolong, and Puerh teas. The average capacity of these teapots is four to six ounces ...(100-180ml), but pots can hold as little as two ounces (60ml) or as much as ten ounces (300ml). The tea liquor is always decanted from the teapot directly into teacups or into a small pitcher and never left to sit in the teapot. Tea is always drunk plain. Small size teapots allow tea enthusiasts to enjoy multiple steepings of the tea, using short infusions of less than one minute to just over one minute. In order for this process to work correctly, the measurements must be in opposition to those used in Western-style tea steepings. Essentially, the teapot or gaiwan is filled to approximately one-fourth to one-half capacity with tea and the remainder of the space is filled with water. During each steeping, the water penetrates into the leaf a little more until eventually the water reaches the core of the leaf. Each infusion presents another nuance of flavour, giving the tea drinker slightly different variations in flavour to savor over the course of several infusions. See more

Tea that contains discernible amounts of stems or other bits of foreign matter, broken leaf, or accumulated bits of tea dust is not premium tea and should not be purchased. During the preparation of tea leaves the smallest particles are known as tea dust, with the next grade up being known as fannings (the tea that remains after all the other market grades of tea have been sieved).
