Another beautiful winter’s day on the farm Today is calling for soup and grilled cheese at the farm house. And every great soup starts with a great broth. Our farm market offers a variety of broths; beef, chicken and turkey all ready made. We also offer soup bones and marrow bones if you’re up to making your own. ... Here is a great recipe!!! Beef Broth Ingredients: * 4 pounds meaty beef soup or marrow bones * 3 medium carrots, cut into chunks * 3 celery ribs, cut into chunks * 2 medium onions, quartered * 1/2 cup warm water * 3 bay leaves * 3 garlic cloves * 8 to 10 whole peppercorns * 3 to 4 sprigs fresh parsley * 1 teaspoon dried thyme * 1 teaspoon dried marjoram * 1 teaspoon dried oregano * Cold water Directions * Preheat oven to 450. In a large roasting pan, bake soup bones, uncovered, 30 minutes. Add carrots, celery and onions. Bake 30 minutes; drain fat.Using a slotted spoon, transfer bones and vegetables to a large Dutch oven. Add warm water to roasting pan; stir to loosen browned bits. Transfer pan juices to Dutch oven. Add seasonings and enough cold water just to cover. Slowly bring to a boil, about 30 minutes. Reduce heat; simmer, uncovered, 4-5 hours, skimming foam. If necessary, add water during first 2 hours to keep ingredients covered. Remove beef bones; cool. If desired, remove meat and discard bones; save meat for another use. Strain broth through a cheesecloth-lined colander, discarding vegetables and seasonings. If using immediately, skim fat. Or refrigerate 8 hours or overnight; remove fat from surface.Broth can be covered and refrigerated up to 3 days or frozen 4-6 months. Nutrition Facts 1 cup: 209 calories, 10g fat (4g saturated fat), 56mg cholesterol, 61mg sodium, 6g carbohydrate (3g sugars, 2g fiber), 22g protein.

It’s like Christmas morning around here as we await the the arrival of our Milbank cheese order today!! Millbank is known for its beautiful aged cheddars. We offer a large selection of their cheese, cheddar, aged cheddar, havarti, Swiss and curds. Here is a perfectly cheesy recipe for a winter’s day!!... Cheesy White Chili Ingredients * 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes * 1 medium onion, chopped * 1-1/2 teaspoons garlic powder * 1 tablespoon canola oil * 2 cans (15-1/2 ounces each) great northern beans, rinsed and drained * 1 can (14-1/2 ounces) chicken broth * 2 cans (4 ounces each) chopped green chiles * 1 teaspoon salt * 1 teaspoon ground cumin * 1 teaspoon dried oregano * 1/2 teaspoon pepper * 1/4 teaspoon cayenne pepper * 1 cup sour cream * 1/2 cup heavy whipping cream * Tortilla chips * Shredded cheddar cheese * Sliced jalapeno pepper Directions * In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chiles and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Remove from the heat; stir in sour cream and cream. Top with tortilla chips, lots of Millbank cheese and jalapenos. Enjoy!!!

It feels like a pork chop kind of day today!! Here is a beautiful recipe that would be perfect for today!!!! Skillet Apple and pork chop Recipe ... INGREDIENTS 2 bone-in pork loin rib chops 2 1/2 cups apple cider, divided 1 cup water 1/2 cup kosher salt 1 large sweet-tart Ontario apple, such as Honeycrisp or Pink Lady 1 yellow onion 4 cloves garlic 1 teaspoon canola 4 sprigs fresh thyme INSTRUCTIONS Prick 2 pork chops all over with a fork about 1/8-inch deep. Flip the pork chops and repeat pricking the other side. Place 2 cups of the apple cider, 1 cup water, and 1/2 cup salt in a gallon-size zip-top bag, seal the bag, and massage to dissolve the salt. Add the pork chops and seal the bag. Place the bag on a rimmed baking sheet and arrange the pork chops so they sit in a single layer. Let brine at room temperature for 30 minutes, or refrigerate for up to 8 hours. When ready to cook, core and cut 1 large apple into 1/4-inch thick slices, cut 1 small yellow onion into 1/2-inch wedges, and peel and smash 4 cloves garlic. Remove the pork chops from the brine and pat dry with paper towels. Heat a large cast-iron skillet over medium-high heat until just beginning to smoke. Add the pork chops and cook until they begin to brown, about 1 minute on each side. Reduce the heat to medium. Continue to cook, flipping the chops every minute,until they register 140 to 145F in the thickest part, 6 to 8 minutes more. Transfer the pork chops to a clean plate. Add 1 teaspoon canola or other neutral oil to the pan. Add the onion, garlic, and 4 sprigs fresh thyme, and cook until onion begins to soften and brown, 3 to 4 minutes. Add the apples and remaining 1/2 cup apple cider and nestle the chops on top. Cook until the apples are warm and tender but not falling apart, 3 to 4 minutes. #porkchops #putporkonyourfork #ontariopork

Option 1: Drive to the farm any day Tuesday-Saturday 10am-5pm and shop from the porch. Our lovely girls will greet you at our porch take away window and take your order and shop for you! We still offer the same amazing products and more!!! ... Options 2 and 3: Place your order on-line at www.thatcher-farms.com by Monday at midnight for pick up Friday and Saturday 10am-5pm. You have two options here. Option 1 pick up from the farm porch window where you can also pick up other items as well. Or chose Plunk in your Trunk. Here you drive to the farm, park in the designated parking spaces and call 519.856.4073 and we will place your order in your trunk for contactless pick up. Those are our options for 2021. Our staff and our customers mean the world to us and we want to ensure their safety while still offering the same great products and service.
