Sweet Potato and Pear Soup - Sophisticated comfort food! A sweet and warming winter soup with a touch of heat from the Epicentre’s Hot smoked paprika. Ours comes from Spain, and is of the spicy (or "picante") variety. Its smoky, hot flavor comes from drying round red chile peppers in an oak wood-burning oven before grinding. It lends rich red color, spice and subtle smokiness to cream-based sauces and soups. Sweet Potato and Pear Soup... 1 tbsp butter 1 small onion, chopped cup chopped carrot cup chopped celery 3 medium-sized sweet potatoes, peeled and diced 2 pears, peeled and diced tsp dried thyme 1 tsp The Epicentre smoked Hot paprika 5 cups chicken broth cup whipping cream, optional 2 tsp The Epicentre maple granules, or maple syrup 2 tsp lime juice, or to taste Salt and freshly ground pepper to taste 1. In a pot, heat butter on medium heat. Add onion, carrot and celery and sauté for 1 minute. Add sweet potatoes, pears and thyme and sauté for about 2 minutes. Add paprika and chicken broth. Bring to a boil and simmer for 15 minutes or until sweet potato is soft. 2. Purée in a blender or food processor until smooth. Return to pot. 3. Add cream, maple granules or syrup and lime juice. Simmer for 5 minutes. If soup is too thick add a little extra broth. 4. Season with salt and pepper, adding more syrup or lime juice as needed. Can be made up to 2 days ahead of time. Serves 8 Adapted from a Food and Drink magazine recipe by Lucy Wavermann

In cooking, juniper is often used to lend a bright, resinous flavour to fatty, deeply flavoured ingredients like wild game, duck, and choucroute (the Alsatian sauerkraut and sausage dish)....Continue reading
