Sick of pumpkin yet?!?! Me neither . Here is my recipe for mini #pumpkin #cheesecakes just in case you need a little more pumpkin in your life too . If you want... to get extra fancy, add some coconut whipped cream on top . Crust: mix all ingredients in your food processor until it comes together. - 1 1/2 cups pecans - 1/2 cup shredded unsweetened coconut - 6 medjool dates - 1 tbsp of coconut oil - 1/4 tsp cinnamon - pinch of sea salt Filling: add all ingredients into a high powered blender until smooth. - 1 1/2 cups of raw cashews (soaked, rinsed and drained) - 1 cup pumpkin purée (I used organic canned pumpkin) - 2 tbsp coconut oil - 1/4 cup raw honey (or maple syrup) - 1 tbsp vanilla extract - 2 1/2 tsp cinnamon - 1/4 tsp cloves - 1/4 tsp ginger - pinch of nutmeg - pinch of sea salt Leftover pumpkin? Make a smoothie with it! Mine included: 1 cup hemp milk, 1/2 cup or so of leftover canned pumpkin, 1 frozen banana, a scoop of almond butter, and a good pinch of: cinnamon and smaller pinch of nutmeg and cloves. Add a touch of maple syrup if you like it a bit sweeter. Blend with ice and serve!
