How comfortable are you guys at cooking duck? When I lived in Quebéc it became one of my new favourite meals so am extremely happy that we are now carrying @fraservalleyspecialtypoultry ‘s wonderful products at The Ruddy! For crispy duck breast: I like to salt and pepper, score, and sear fat side down till it renders down to my personal preference. Then do a quick flip and finish in the oven! I have tried it with so many things but my favourite way is just to serve it with ...a bright salad and a punchy vinaigrette which balances the richness of the duck and allows it to shine. This also means you just have just one thing to keep an eye on, making for a simple yet wonderful supper!
