EDIT: well, these sold out out in a hot minute, and me thinking I made enough puffs for 2 days. My grandmother would make cream puffs with real whipped cream and homemade chocolate sauce. The news would travel fast, and we'd line up with our plates. She's been gone for many years now, but was cooking until the last week of her life, and died at 97. Thinking of you today, and putting these on our menu in your honour. Goodie's Cream Puffs. $5.... He had this syndrome. He loved his community and he loved cinnamon buns. Lisa said he would have loved our restaurant and we would loved to have met him On behalf of his memory they wanted to buy gift certificates for our customers and the food bank. #adaytoremember... Our friend Ashley called a little while ago for a pizza and she knew what she wanted, a white and green with potato and bacon. Simply, Fiore di latte mozzarella, razor thin potato slices, bacon, and finished with arugula, E.V. olive oil, salt and a balsamic glaze. Foccacia on the bakers rack for sale with olive oil, parmesan, sea salt, red onion, and balsmic glaze $5 Someone might look at that and say it looks like a pizza, isn't foccacia thicker? What's the difference? It's hard to discern, but in Italy foccacia is rarely thicker than an inch, and some, like my favourite, Foccacia col Fromaggio de Recco, is as thin as a 2 pieces of paper. Some say it's whether you can see the crust through the toppings, and others suggest that foccacia is better cold than pizza. It seems to be regional, but here we treat foccacia more like bread, something that can be made ahead of time, warmed up or eaten at room temp on the go. However you like it, this light lunch or filling snack will having you licking your fingers for more.

Beer Battered Cod Burger topped w/ Coleslaw, Tatar Sauce, and a side of Fries $14 Pizza: Satellite Sam, our version of a Hawaiian Pizza named after the first person to put pineapple on a pizza, Sam Panapoulos, and his restaurant, The Satellite in Chatham, Ontario. Sam explained once in an interview that in 1962 when he tried putting pineapple on pizza that pizza was a novelty in Canada at that time, and that the only toppings he and most pizza makers offered at the time were sauce, cheese, mushrooms, pepperoni and bacon. Sam didn't invent a "Hawaiian Pizza" at that time, just merely decided to try it and offer it in addition to mushrooms, bacon and pepperoni. It's our guess that the firsr Hawaiianish pizza was bacon and pineapple, most similar to the modern ham and pineapple Hawaiian pizzas. Pizza of the Day today, Thursday. Marinara: San Marzano Tomatoes, garlic oregano, sea salt and olive oil. You really need to try this unique pizza. Yes, it has no cheese, but it's an Italian classic for a reason. Everyone in the kitchen I try to feed this pizza too balks at the lack of cheese, that is until they try it, and invariably love it. Cheese significantly changes the flavour of both the dough and tomatoes. Not only is this pizza delicious, at $9 it's a light and affordable lunch. Available for takeout or dine in.

A little something extra on the counter for today, Dutch Apple Cake. Simple, crispy edges, apples and cinnamon. Served with real whipped cream for $5. One of my childhood faves.

It's true that cheese changes everything with pizza, from the type of cheese, to the amount and where it's placed on the pizza. It also significantly changes the flavour of the sauce and dough. There is something very special about the flavour of our sourdough Neapolitan style pizzas when the cheese is removed. It is a clearer, cleaner, fresher flavour that doesn't weigh you down. Yes, we'll get back to cheesy pizzas tomorrow, but for now, you gotta try this beauty!

Someone requested that I make some more Scandanavian rye bread so there are some available for sale. $5. This extraordinary whole grain all rye loaf has 12 grains, fresh black currants and honey. It is perfect for smørrebrød, or open faced sandwhiches, or just a quick and healthy snack with some butter. We used to buy live sauerkraut for our Reubens but recently started making it for ourselves. I say "live" because the canned stuff you buy in the grocery store is cooked leaving all the micro-organisms that make it so delicious and super healthy for your insides dead and inactive. Similar to yogurt, keifer and other fermented foods, raw sauerkraut is excellent for your gut biota which not only aid digestion but help tame inflamation and regulate hormones. So while our Reuben...s might be a special treat, rest assured you're getting a healthy dose of good gut bacteria and healthy local cabbage. Today I'm chopping up some nice savoy cabbage, a couple weeks ago it was some Gunma, and the next batch will be Danish Ball cabbages from my garden. Next year we hope to grow a good chunk of the cabbages for sauerkraut ourselves. All this love for one sandwich!

We've been wanting to do these for a while, but we don't have a lot, or any really, fancy donut equipment and fillings are done all by hand here, but we are pretty excited about our first version of Boston Cream donuts! Buttermilk Bonnie certainly looks happy! We hope to do these every Saturday, but because of the amount of work involved there is no discount on a half dozen or a dozen of them, and they can't be mixed into with others to form a half or full dozen. $2.45 each.
