The Wandering Bison 13.12.2020

Final four courses! We decided to class things up for these next twenty years as this was when Mr Matt became Mr Fancy Pants Matt L:R T:B... Tacos 3 ways: smoked paprika & pablano, cast iron rock fish with mezcal & tequila braised chicken. All served on red corn tortillas Sushi: yuzo cured, cold smoked Charr and sesame & pumkin seared Tofino tuna "The Decadence": confit pork belly with seared sea scallop & blackberry pickled shallots, parmesan gougiere with foie gras mousse & butter poached lobster tail, beef striploin with whisky peppercorn cream sauce & crisp king oyster mushrooms "Buzz Lightyear" a six layer tartufo consisting of dark chocolate, mint, vanilla, fudge brownie and strawberry all wrapped around a raspberry sorbet that has been packaged inside a toasted white chocolate crunch. Rolled in a Dutch cocoa & topped with shaved chocolate that has been infused with 98% THC #micdrop

Peach Bellini? Awe hells nah! Continuing on with the tasting menu, we reach the pallet cleanser course of the Iced Jager Bomb. Here I decided to serve a Smirnoff Ice granita topped with a shot of Jagermeister & finished with a dose of Red bull. Last week, I got to stretch my muscles a bit with an 8 course tasting menu that reflected the 35 years of birthday awesomeness that is @mrmattdouglas (scroll down for descriptions) @erinlegs came up w the concept of each course representing five years of life & @yukon_heather & I smashed the ideas around w the help of Matt's family & friends. Check out the epic glory of the first four courses! L-R T-B... Course 1: POGOs!! - red corn blini, 18yr whisky hot dog, mustard caviar Course 2: Pizza Bagel! - KD cheese infused bagel, magic fat tomatoes, fresh mozza & pepperoni crumble Course 3: Chicken Balls - 5 spiced chicken thigh, Tempura batter, grilled pineapple & red sawse Course 4: Burger - Port marinated foie gras wrapped w red wine braised short ribs stuffed within a smoked brisket & prime rib burger served on a purple potato bun
