Happy Valentine’s Day! Tuna Crudo - sushi grade fresh tuna, Bermuda onion, caviar, capers, baby tomtoms, fresh fennel and tarragon, evoo, lemon foam. This dish is my special thank you to you. So are these words. ... Shipwrecked and Happy And when we go there - it will the bottom of the sea, in the darkness of the deep we will see nothing, only feel what is unseen, moving gently past us. Swimming against the current, we will listen as the waves whisper, shipwrecked and happy, feeling for their touch, lost together in the beautiful unknown. Will you come with me? A very special celebration night last night, thanks to my beautiful and very thoughtful family, congratulating me on making 10K friends on Instagram. I wanted to make us something very special to share - because moments like this are important to celebrate together - and so I imagined all of you sitting at my table as well. I am truly grateful for all of your encouragement, kind words, suggestions, support and love that you have shown me throughout this amazing IG journey. I...t has really been more profound than I could have ever imagined. The diversity of this channels culture spans the globe and is truly remarkable - I communicate daily with so many inspiring human beings in ways that are personal and grow so many relationships that transcend just the food. My post later will speak to this more - but I love you all and thank you for your time and stopping by to meet me here. With my family and you in my heart, I prepared tender local beef striploins with annatto steeped Chimichurri, butter poached lobster claws with tarragon and caviar. Served with black maitake mushrooms, smoky Salish alder wood sea salted asparagus and herbed fingerling potatoes. Raised a glass to you all of Moët & Chandon Champagne. A huge thank you to my family for this beautiful day and all of their love and support!! My heart is full, and I am humbled. Need I say more!? Baby Back Treats thanks to the magic of @ontariopork and my @napoleonproducts Rogue alongside my homemade citrus bbq sauce. When I want to whip up this sauce quickly this is what I do: 1. Take 1 1/2 cups of Diana’s Honey Garlic BBQ Sauce as a base 2. Throw in the zest of two navel oranges 3. Squeeze in the juice of two oranges 4. Grab a beer... 5. Pour it in a glass for yourself and start sipping 6. Don’t add any beer to the sauce just drink that one 7. Then get back to the sauce we are trying to make bbq sauce here 8. Add a quarter cup of white vinegar 9. Add one heaping tablespoon of Dijon mustard 10. Add 2 tablespoons of brown sugar 11. Now you’re getting distracted and forgetting about your beer, pause and have a sip 12. Add salt and pepper to taste 13. Add as much of your favourite hot sauce as you want - mine is @wayhotsauce Habanero In Your Head . That’s it. When grilling always start bone side down. When it begins to bubble and crackle, then flip those babies and get some delicious colour on them. Then start varnishing. Multiple coats to build up that gooey flavour bomb. I fall off the bone thing of beauty! You have the sweet, sugary, citrus, heat with the vinegar tang that just can’t be beat! I’ll give you the long version of the recipe where you build your own base next time - but this is a perfect quick one to go with those amazing ribs! Grilled Honey Ginger Lime Shrimp. That’s right. Honey. Fresh grated ginger. Lime. Salt. Give it a toss in a bowl and throw it down on your @napoleonproducts grill on a silicone grill mat and caramelize those tasty treats! Dip them, throw them on a salad, in pasta, in a stir fry, on some crostini’s with mashed avocado - or just naked like this. Your mouth will be watering before you even taste it! Delicious Smoked Chicken Thighs with a Mango Curry Glaze - mixing perfect with @tedgrills Bollywood spice mix - so fragrant and smoked on the @traegergrills with applewood. Grilling & Chilling!! Bundled up for a tasty cook last night with some Monkey Burgers (made with @fivemonkeysbbqsauce - no monkeys were harmed in the making of this burger ) doused with some Montreal Steak Spice, diced onions and jalapeños and laid out on the @napoleonproducts Rogue in the balmy -72,859F Ontario evening and stacked up with some homemade horseradish mayo, melted cheese, orange tomato slices, smoked thick cut local bacon and avocado and more @fivemonkeysbbqs...auce - topped with some baby tomatoes (for vitamins) and @tedgrills Bonedusted wings (can’t get enough). Squishy Brioche Buns are the fave here. Made some of my thin sliced convection cooked Russets (that way they are ALL crunchy, like our favourite ones we always try to pick out and when I finally thawed out and could move again we had a tasty dinner with euchre - where the boys won AGAIN! Tried to toast the #tuzichallenge4 outside but the beer froze solid while I was grilling - I’m going to look like Sasquatch grilling fir game day tomorrow!
