Happy Thanksgiving! I am Thankful for many things this year This year we had homemade Carrot ginger soup as part of our Thanksgiving dinner Heres the recipe:... INGREDIENTS 3 Tbsp unsalted butter or ghee or coconut oil 6-7 large carrots, peeled and sliced thin 2 cups yellow onion Salt 1 teaspoon minced ginger 2 cups vegetable stock 2 cups water Garnish with chopped chives and a drizzle of cream / coconut milk DIRECTIONS Sauté the carrots & onions in butter or ghee Add ginger, stock and water bring to a simmer Purée soup, serve and enjoy!

Iron deficiency in athletes is common. Athletes need more iron than the general population because iron is lost through sweat, skin, urine, and the GI tract. Exercise, particularly high intensity and endurance types, increases iron loss by as much as 70% when compared to sedentary populations. Iron is a mineral that comes from our diet, it has several important roles in the body including oxygen transport, energy metabolism, and acid-base balance. Dietary iron can be classifi...ed into heme iron and non-heme iron. Heme iron is found in meat, poultry, and fish which is absorbed by the digestive tract about twice as well as non-heme iron. Sources of non-heme iron includes fruits, vegetables, and iron fortified foods. Vitamin C assists with the absorption of non-heme iron in the digestive tract so mixing foods rich in vitamin C such as broccoli, peppers, or citrus fruits with non-heme iron containing foods can increase the amount of iron the body absorbs.
