For over 25 years, the CWC's Clam Chowder has been a staple on Fridays at the club. Bring a little bit of the CWC home to your table this week - Chef Santosh has shared the recipe and modified the ingredient list so you can find everything at your local supermarket. Ingredients: Famous CWC Clam Chowder Chowder is a type of soup or stew often prepared with milk or cream and thickened with broken crackers, crushed ship biscuit, or a roux. Variations of chowder can be seafood ...or vegetable Bacon diced - 50g Olive oil/ Butter - 50g Onion diced - 100g Garlic minced - 20g Carrots diced - 100g Celery stalks diced - 50g Dried or fresh Thyme - 15g Onion powder - 20g Garlic powder - 20g Black Pepper Powder - 8g/to taste White Wine - 50ml Potato diced - 400g Milk - 400ml Clam Stock - 500ml Salt - 8g/to taste Cream - 200ml Cornstarch - 25g Salmon/Cod /Shrimp/ cubed - 300g(Seafood of your choice) Baby Clams /Mussels - 1can/150g Lemon/Lemon Juice - 10ml/to taste Procedure: In the pot sauté bacon until fat is rendered off and crispy. Add olive oil/butter to the pot and sauté the onion, garlic, celery, and carrots stirring occasionally till al dente. Add the dried ingredients and cook for 3-4 min and deglaze with white wine. Once alcohol is cooked out, add the potatoes, and cover with about 500ml of water, milk and stock. Once at a rolling boil, leave till the potatoes are completely cooked. Now make a slurry using corn starch and cream. Add slurry to the pot while whisking to prevent clumps and let simmer for 7-8 min to cook out starch, stirring occasionally. Add your seafood Once cooked add lemon juice to your taste. Taste and adjust seasoning as required Crumble the cooked bacon; sprinkle over each serving. Note: adjust the thickness of the soup by adjusting the amount of cornstarch used in this recipe

CWC Annual General Meeting 2020 The CWC AGM will be held on Wednesday, October 21 at 7:00 pm in the Skyline Room. To allow for more shareholders to be represented, we ask that only Shareholder Members attend this year.... Seating will be physically spaced according to AHS guidelines. All questions will be asked from the floor, no microphone will be available. There will be no coffee service or post-AGM reception this year. A maximum of 100 people is allowed in the meeting space. Our Articles of Association and the Alberta Companies Act, under which we are governed, do not allow for the possibility of a virtual AGM. The Alberta Government is advising that organizations should not undertake an AGM that contravenes the Act and the organization's Articles. We plan to run our AGM in the normal fashion, in accordance with our Articles, and we hope that more than 50 shareholders will attend. If we are unable to secure a quorum of 50 shareholders on October 21st, the AGM will be adjourned to one week later, at the same time and place, as per our Articles. Quorum for a meeting so adjourned is any number of shareholders present. If you are a shareholder and are unable to attend the meeting, please complete your shareholder proxy to take part in the election of Directors and to ensure that you are represented at the AGM. Completed Proxies can be emailed to [email protected], dropped off at the front desk, or faxed to 403-282-6392.
