Every Friday the smell of couscous fills the streets of Morocco. In my hometown of Asilah, our home would also be filled with family and friends feasting on the tender steamed couscous topped with vegetables and the lamb that has been braised in the oven for hours. Here at The Casbah, we bring those same delicious recipes to share with you. #couscousfriday

This tajine is a dish we created around the city that is not only the place of my birth but a city that holds a special place in my heart, Casablanca. My Grandma lived in the old medina, very close to the souk (market). Fresh vegetables for as far as the eye could see! The outside walls of the old Medina were lined with meat vendors, selling freshly grilled meats. My favourite was the kefta (minced meatball). The aromas that filled the air were mouth watering! The Casablanca tajine is full of flavour. A tomato based sauce with aromatic Moroccan spices, tender vegetables, chick peas and your choice of protein. You can also opt to leave the meat out. So delicious!
