Research & Develop Bake Eat Blog Repeat TGFB specializes in specialty items and desserts that are not only gluten free and delicious but what I have noticed, rare as well. I have visited almost every gluten free bakery in South Western Ontario and tend to find the same items: macaroons, brownies and carrot cake. Now don’t get me wrong, these are delicious items at most locales however they are the gluten intolerant individual’s equivalent to the lunch time cookie. You know..., you’re making your lunch and need a little something sweet to finish off your meal and you go for the quintessential cookie. But what about if you want something different with your afternoon tea. girls night or special occasion like fresh cream filled éclairs or a dulce de leche jelly roll? We are always testing new recipes with a resolute desire to create creamy desserts, tartie tarts and decadent treats and love new ideas and suggestions. Today is the feast of St. Jean de Baptiste and it would also have been my Nana’s 110th birthday. (Her middle name was Baptista) Everyone says that their grandmother is the most amazing woman in the world and my Nana was no exception. She told each one of her grandchildren individually that they were her favourite and then told each of us not to tell anyone. It wasn’t until my siblings, cousins and I were adults that we all compared notes Nana told everyone the same thin...g! She was amazing and always made you feel so very special. She also made the most amazing genettis, a soft cake type cookie covered in an anise (licorice) flavoured icing. I don’t know if it was a Sault thing but I did not grow up with biscotti, our coffee cookie was the genetti and my Nana made the best genettis in all of Sault Ste. Marie. I found the recipe in my mother’s recipe file in my mother’s hand writing so she too wanted to learn how to make these delicious morsels of love. I was surprised to learn that there are 6 eggs in the batter and as I had posted in another blog entry, the eggs are beaten for 30 minutes. When I make genettis , the smell of the anise reminds me of my childhood when my Nana made genettis in her basement kitchen. She always made about 6 dozen because she didn’t know how to make a normal size batch of anything. Nana always had enough food to feed anyone who came to her doorstep. It has taken a few attempts to convert the recipe and I am so happy that my gluten free version of Nana’s genettis finally tastes like the original. Everytime I eat one, I am transported back in time to my Nana’s kitchen and reminded of how special my Nana was and how special she made you feel. It is amazing what a little cookie can do!
