The BEST Vegan Waffles (GF) As my new website (The Holistic RN) is about to launch in the coming weeks, my old site (The Happiness Project) will be taken down. And although this recipe will be transferred to the new site, I’ve had so many of you asking about it that I wanted to share it here for you in case there is lag time between it becoming available on the new site.... So here is my FAVOURITE vegan, gluten-free, and healthy waffle recipe- perfectly crunchy on the outside and soft on the inside, with just enough sweetness. These are refined sugar free, could easily be made completely sugar-free by eliminating the maple syrup, and they are made primarily with almond flour. The batch written as is makes three waffles, but I generally double it so that we have enough for two days. To warm up the next day, simply pop the waffle into the toaster. Enjoy babes! INGREDIENTS 1 cup blanched almond flour 1/2 cup tapioca starch 1 tsp baking powder 1 tbsp ground chia seeds + 3 tbsp water 1/2 cup plant milk 2 tbsp apple sauce 2 tbsp almond butter 1 tsp apple cider vinegar 2 tbsp maple syrup 1 tsp vanilla extract 1/4 tsp pink Himalayan salt DIRECTIONS STEP 1: Combine the ground chia and water in a bowl, whisk together and set aside to thicken. STEP 2: Add the almond flour, tapioca starch, baking powder, and salt in a large mixing bowl and mix together. STEP 3: Add in all remaining ingredients and whisk together. Stir in the chia egg. STEP 4: Heat a waffle maker and add a touch of coconut oil to prevent sticking. STEP 5: Use a ladle to scoop out the batter into the waffle maker. Repeat until all batter has been used. Hold on I’ve got to overthink everything you just said. Sound familiar? #Itsme One of the biggest challenges with facing anxiety is the CONSTANT overwhelming urge to overthink everything. ALL. THE. TIME. ... So and so, hasn’t responded to my text, are they mad at me? Why does he/she seem so distant lately, have I done something? Is he/she judging me for what I said last time we hung out? Do they like me? Was there actually a tone there or did I imagine that? What did that text even mean? Can you relate babe?! I used to be your classic case of overthinking. I used to assume everything meant something more or different than what it actually did- and I’ll be the first to admit that that bad habit caused more than a few hiccups along the way It’s taken some serious practice to move past that, and I don’t ever want to go back down that road again. So if you’re currently stuck in that negative and deconstructive mindset- don’t worry, I TOTALLY get it. The thing that you need to recognize though, is that it doesn’t HAVE to be that way. You can let go of that constant urge to pick apart and overthink everything that’s said or done. And you can most certainly let go of that anxiety for good- feeling totally safe, happy and balanced. It’s time to ask yourself what you desire the most in this life, and what would you do if you weren’t afraid? We all have just one life to live, and one mind to do it with... so how do you want to spend it? What thoughts will you choose to have? Don’t forget that you are an incredible woman inside and out- you deserve love, laughter, health and happiness, AND you can do ANYTHING you set your mind too. Happy Friday See more

20 MUST READ BOOKS If there is one thing I love (and always have loved), it’s sitting down with a good book and a hot cup of tea. And although my preference on the type of books has changed over the years- the passion itself has not.... So while I still love to read anything by my favourite author (Mary Higgins Clark), I’ve come to realize over the years just how big of an impact reading can have on your mind and growth.
