Words to live by... A Friday funny... And a super easy healthy recipe to make with your kids or to treat yourself!... Pineapple upside cakes (or banana, apple or pear) made gluten free and dairy free. In small foil cupcake tins, grease with coconut oil or your choice of oil Fill the bottom layer with cooked/caramelized fruit (we made some with apple and cinnamon, some with pear, banana and some with pineapple. Top with gluten free or keto pancake batter, and we use Bob’s Red Mill brand (or the pancake batter of your choice) Put enough pancake batter to be smaller than a cupcake but thicker than 2 pancakes would be. (To your pancake batter add 1tsp vanilla extract, cinnamon and a bit of coconut sugar or sweetener of your choice) Bake at 350 until your pancake batter is cooked and looks like the top of a cake. While your treats are still warm, flip them over and voila! Gluten free, dairy free, healthy and yummy upside down cakes that kids can make and big kids can too Enjoy with maple syrup, or coconut whipped cream, jam, or as is! (To cook fruit, simply slice, heat in a skillet with a bit of coconut oil, sprinkle with cinnamon and a tiny bit of coconut sugar (optional) until the fruit is soft) You can add some water as needed if the pan is dry. My kids loved them with maple syrup. Enjoy and have a ‘sweet’ weekend! You deserve it Hailey
