SESAME CHICKEN AND NOODLE STIR-FRY Makes https://www.sobeys.com//sesame-chicken-and-noodle-stir-fry/ Ingredients: * 4 Seasoned Chicken Breasts... * 1 1/4 (300 mL) Sesame Garlic Cooking Sauce, divided * 1 tbsp (15 mL) Sesame Seeds * 1 tbsp (15 mL) Canola oil * 2 Carrots, thinly sliced * 8 ounces (250 mL) Shiitake mushrooms, thinly sliced * 4 ounces (125 mL) Snow peas, trimmed * 1 Small bok choy, thinly sliced * 6 ounces (175 mL) Stir-fry noodles or linguini, cooked and cooled Directions 1. Brush chicken with cup (125 mL) of the cooking sauce and bake according to package directions. Slice, sprinkle with sesame seeds and reserve. 2. Meanwhile, heat oil in a large skillet set over medium-high heat. Stir-fry the carrot and mushrooms for 4 minutes. Add the snow peas, bok choy and noodles; stir-fry for 2 minutes. 3. Stir in remaining sauce and 1/4 cup (60 mL) water. Cook for 2 minutes or until heated through. Serve noodles topped with reserved chicken. CAULIFLOWER-LEEK SOUP WITH PANCETTA & BALSAMIC CARAMELMakes 8https://www.sobeys.com//cauliflower-leek-soup-with-pancet/ Ingredients: * 2 tbsp (30 mL) olive oil, divided * 1 onion, diced... * 1 bag (250 g) pre-cut leeks * 2 cloves garlic, minced * 8 1/2 cups (2 L +) cauliflower florets, divided * 1 white potato, peeled and chopped * 2 cartons (1.8 L) reduced sodium chicken broth * 1/4 tsp (1 mL) each salt and pepper * 1/4 cup (60 mL) 15% table cream * 1 3/4 oz (50 g) pancetta, diced * 3 tbsp (45 mL) sugar * 3 tbsp (45 mL) balsamic vinegar * 3 tbsp (45 mL) finely chopped fresh chives Directions 1 In a large stockpot, heat 1 tbsp (15 mL) olive oil over medium heat. Add onion, leeks and garlic and cook, stirring often, until softened, 5 min. Add 8 cups (2 L) cauliflower, potato, chicken broth, salt and pepper and simmer until potatoes are tender, about 25 min. Let cool slightly. Fill a blender 2/3 full and purée soup in batches until smooth. Return to stockpot and stir in cream. 2 In a microwavable bowl, add 2 tbsp (30 mL) of water and remaining 1/2 cup (125 mL) cauliflower. Cook on MEDIUM to soften, 1 to 2 min. Strain and set aside. In a small skillet, heat remaining oil over medium-high heat. Add pancetta and sauté until edges are crispy. Transfer to paper towellined plate. Add sugar and vinegar to skillet and cook, stirring occasionally, until sugar dissolves and vinegar starts to boil and thicken, about 3 min. Set aside. In another bowl, mix together reserved pancetta and cauliflower with chives. Set aside. 3 Divide soup among 8 serving bowls. BEET SALAD WITH ROMAINE, FETA CHEESE AND NECTARINESMakes 4 Servingshttps://www.thriftyfoods.com//beet-salad-with-romaine-feta Ingredients: * 1 1/2 lbs. beets (without tops), about 8 medium beets * 2 Tbsp. orange juice... * 11/2 Tbsp. balsamic vinegar * 1 tsp. honey * 1 tsp. Dijon mustard * Salt and freshly ground black pepper to taste * 1/4 cup olive oil * 8 cups chopped romaine * 125 grams feta cheese, crumbled * 2 ripe medium nectarines, cut into thin wedges Directions MethodPlace the beets in a pot and cover with cold water; gently boil until tender. Cool the beets in cold water and then peel and set on a plate. Combine the juice, vinegar, honey, mustard, salt and pepper in a large bowl. Whisk in the olive oil. Very thinly slice the beets and divide and arrange in a circle on the outer edges of 4 plates. Add the romaine to the dressing and toss to coat. Mound and arrange the romaine in the centre of the plates. Top the romaine with the feta and nectarines, and then serve.
