The Legend of Taiwan Style I invented this flavour in a panic. Over 5 years ago I held a series of pop ups to get my name out. Eight days, for three hours a service of all you can eat. For $25. Because I had a lot to prove I couldn’t just offer a couple flavours, right? I had to make another. I had something to PROVE. I made this business and it was my decision to invite the general public to come eat. With no experience. ... The night before the opening I headed to my green grocer in Chinatown after prep. Urgently scanning the vegetables I was reacquainted with jiu cai . Disturbing the leaves as I picked up the elastic banded bunch sent up wafts of intense allium. Savoury, aromatic, and gently sulphuric. I was reminded of the scent of boiled dumplings my Taiwanese classmates would eat in elementary school next to the basketball court. I thought about my times in Taiwan. Sitting in fluorescent-lit muggy canteens eating guo tie on Taipei’s streets watching the nightly news. But would they find what I find delicious? The next evening I folded them live, to be cooked immediately for the throngs of people who came to see what the fuss was about this Dumpling King. First draft of the recipe on the first day. I wagered my first chance of a reputation based on my experience and nostalgia. I’m not even Taiwanese and I dare call it that. It was an honest, simple recipe using ingredients purveyed by businesses within a 2 block range of the city. And so it remains. What I learned is this: food doesn’t need to be ground breaking or hype for it to sell. It just needs to be done honestly and communicated honestly. I ended up folding 3000 pieces of Taiwan Style for those pop ups. Some of the best creations are forged under pressure #DumplingKing @gardenpartyflowers
