Healthy sugar-free homemade breakfast cereal bars - made with Einkorn flour and Ningxia Red! I’ve been searching for a healthy version of nutrigrain bars for my kids (and especially for my toddler) since all the ones I’ve come across (even the baby ones!) are loaded with added sugars and syrups. No thanks! My daughter and I experimented with a batch this morning and the results are better than I hoped for! They are delicious and I’m sure they will be gone in no time, whic...h is ok with me since they’re made with whole, simple ingredients. Jam Filling: 2 cups organic strawberries (I used frozen) 2 tbsp Lemon Juice 1/4 cup raw honey 2 doonks Stevia (1/16 tsp). (I use the THM brand stevia, so adjust to taste if you use a different one) 2oz Ningxia Red 1 tsp Xanthan Gum Add strawberries, lemon juice, honey, and stevia to a medium pot. Bring to a boil whisking frequently, and simmer 8mins or until strawberries start to break down. Remove from heat, let cool a few mins and stir in Ningxia Red. Whisk in Xanthan gum. Let cool. Bars: 1 cup Einkorn Flour 3/4 cup Organic Rolled Oats 1/2 tsp cinnamon 1/4 tsp Mineral Salt 6 tbsp cold butter, cut into small pieces 2 egg yolks (reserve egg whites for brushing later) 2 tbsp plain Greek Yogurt (or cream cheese) 2 tbsp raw honey 2 tsp pure vanilla extract 2 doonks Stevia Preheat oven to 350F Mix together flour, oats, cinnamon and salt in a medium bowl. Add cold butter and blend together with pastry blender. Add egg yolks, yogurt, honey, and vanilla, and mix until combined and forms a ball. (Add 1 tsp cold water at a time if dough is too dry). Put dough onto floured surface (dough will be sticky - flour it well!). Roll until 1/8 thick and cut into 4 squares (pizza cutter works well!). Place 1-2 tbsp of jam filing on each square. Brush borders with reserved egg white then fold and press edges together (so seam is in the middle). Place seam side down on baking sheet lined with silicone mat or parchment paper. Brush tops with egg whites. Bake 15-20 mins until golden brown. Enjoy!! I added too much filling to each bar so they did ooze a bit.. but I prefer more filling than not enough . The batch of Jam Filling makes more than enough for the bars, so save the extra to put on toast or pancakes, or make another batch of bars!

Blackberry-Chia Seed Jam with Lemon+ EO Blackberries are ready to be picked so I’ve taken my kids out a few times to collect these big, juicy berries. Mmm! With my kids helping, the first few handfuls get eaten but then eventually they start to make it into the bucket. My youngest (14mos) enjoys watching from the stroller as my other 3 kids make their rounds popping the super ripe ones in his mouth. I’ll deal with the fallout of that later but hey, it keeps him happy! Thi...s recipe is super fast and easy to make. It’s a small batch, so it’s easy enough to make a fresh one as you run out. I doubled this batch and am freezing some as we speak! (I’ll let you know how that turns out!) Blackberry-Chia Seed Jam with Lemon+ EO 1lb Blackberries Squirt of Lemon Juice 3 Tbsp Pure Maple Syrup or Honey (I used 2Tbsp plus a bit of Stevia). 3Tbsp Chia Seeds 2-3 drops of Lemon+ EO Put blackberries and a squirt of lemon juice in a pot and bring to a boil. Mash blackberries as they boil or use a hand blender if you want a more uniform texture. Add sweetener, stir and simmer for 5 mins. Add chia seeds, stir and simmer for 8-10 mins. Remove from heat and let cool. Add Lemon+ EO as it cools. Stir well. Store in jars in the fridge. Best if consumed in 1-2wks. It will thicken more as it cools. Enjoy! All 4 of my kids devoured this on some toast for breakfast

Back in stock while supplies last! I was able to get some last time and wow, they’re so pretty! I place a few drops of oil right on top of the succulent and the smell is subtle, but noticeable, for days! One lives on the shelf in my bathroom, one on my kitchen counter, and another on a bookcase! My favourite combo is lemongrass and ylang ylang or basil and lavender. Mmm!
