You've picked the berries, eaten your fill, and still have some left? How about a fresh strawberry pie? Here's one that uses a pressed crust with chopped pecans! This comes highly recommended! From Fran's kitchen:... Fresh strawberry pie crust: 3/4 cup flour 1/2 cup quick rolled oats 1/2 cup chopped pecans 2 tbsp white sugar 1/8 tsp salt 1/2 cup softened butter Mix together and press into a deep 9 inch pie plate. Bake crust @400F for 12-15 min or until golden brown Cool crust then fill with fresh strawberries. If the berries are large cut them into smaller pieces, small berries can be left whole. Cover the berries with glaze(recipe below) Glaze: 3/4 cups sugar 2 tbsp cornstarch Mix these two dry ingredients. Add one cup of water and boil, to thicken. Remove from heat and add 2 tbsp corn syrup and 2-3 tbsp of strawberry jello powder. Cool slightly and pour over the berries. Refrigerate for a minimum of 4 hours before serving. Best if left over night. Serve with fresh whipped cream. Let us know how yours turned out!
