J'adore Les galettes des échalotes vertes Wow love scallion pancakes
Someone in a recipe club asked what to do with a piece of cod. I told them to try this interesting treatment. I guess it is a upscale version vinegar doused fish and chips. I first tasted this more refined treatment in a Portuguese coffee shop in Cape Cod while summer jobbing. Here is the recipe: COD IN VINEGAR SAUCE! Bake, roast, poach, grill or fry it but finish with hot sauce at the very end, even on the serving platter: - slow cook covered: sliced onion, garlic and fres...h or dried chili in olive oil, with s. and p. - near the end add capers, olives if you like, flat leafed parsley, white vinegar of choice (white balsamic is good). - change up the ingredients as you like, works well with thinly sliced lemons in the last minutes of the onions for example. - proportions are to taste but I do 2 to one oil to vinegar but you could do less (more like salad dressing proportions). - versions of this all over the world (it's more southern European with olives etc but many Asian cuisines do something similar). - the Portuguese batter or bread the fish and then the vinegar reacts in a delicious but odd looking way with the crispy outside. (Sort of a variation on Fish 'n Chips). - In Hamburg Germany they do the exact same thing with herring but no olives, capers etc. I used to eat it at our university cafeteria and thought it was the craziest looking dish but it was soon my favourite. - for home I would just roast or steam/poach the fish for a clean contrast and pretty final presentation.
