Tony's knife work on these Galettes des Rois! 384-8669 pour commander. A traditional French pastry, the Galette is composed of puff pastry and frangipane - and a hidden prize! Whoever finds the prize becomes the King or Queen for a day!... In previous centuries, the Galette was divided into the amount of slices as there were guests, plus one - the "share of God" or "share of the poor" - and that slice would be given to the first needy person to approach the house.

13 years ago today we opened up with two tables and a whole lot of passion.

Salmon mi-cuit with house radish kimchi and cucumber gochujang vinaigrette.

Our chocolate "Italiano", while delicious, is a bit of a misnomer. The cake isn't Italian at all, and can hardly even be called cake. While our current rendition of the Italiano bears a passing resemblance to the (very Italian) "Torta Caprese" - flourless, uses 70% cocoa - our Italiano gets its melt-in-your-mouth creaminess because it starts off as something between a ganache and a custard, and is baked at very low temperatures. Tony was crafting a version of the Italiano in his younger days as the pastry chef at Jasper Park Lodge. The name comes from the generous amounts of Italian espresso folded into the dark chocolate, which we still do today.
