TENACITY is back, retro-style. Our favourite batches were the first ones to be brewed at Tooth and Nail, when the beer was dosed with whole cone Cascade hops on the way to the fermenter. For various reasons this approach was abandoned, until now. Brewed once again with wonderful and aromatic hop flowers, it’s right back where it belongs. Clean, crisp, and citrusy. LUPO SOLITARIO: Aurum. Brewed in Collaboration with our great suppliers at BSG Canada, this hop is delicious and this Pilsner will give Vim and Vigor a run for its money. 4.8% FORTITUDE Stout. Bold and roasty with a full mouthful of bitter chocolate and coffee flavours, our staple stout is perfect for these cooler days and nights. 5.4% TENACITY Pale Ale. Finally back in the shop, this old school pale ale is inspired by both British and American brewing philosophies. Some things are worth waiting for We are thrilled to release our 2020 Anniversary Ale VIJFDE. For the last five years we have released a variety of ales on our Anniversary that represent an element of brewing that our facility can’t accommodate on a larger level, rendering each annual release a time-capsule of rarity that won’t ever be reproduced. Each release has had three components in that they are blended from various beers produced within that year, have either been fu...lly or partially barrel-aged, and are always refermented with Brettanomyces. Being inspired by Belgian tradition, we decided to name the beers after the Flemish words for ‘first’ (Eerste), second (Tweede), third (Derde), and fourth (Vierde). VIJFDE (‘fifth’ in Flemish, pronounced vief-de) is a dry-hopped blend of barrel-aged and stainless pale ales with Brettanomyces. This year’s blend is comprised of an undisclosed barrel-aged pale beer, Agraria, Brettanonacity, and Discretion, and has been dry hopped post-blend with New Zealand Nelson Sauvin hops. While funky and complex, this ale drinks easily, with a balanced bitterness and plenty of white wine notes to keep it all in check. Delicious now, this beer should easily age for three years or more, developing complexity along the way. VIJFDE is now available through all of our retail channels at $11.50/500ml bottle. Our Anniversary releases will be on sale tomorrow, Friday September 18th at noon. While we can guarantee both RED LETTER DAY and VIM AND VIGOR Anniversary Edition will be released, we are still waiting on one last piece of the puzzle to come together to make VIJFDE available. While we are optimistic we get it to you tomorrow, noon currently seems unlikely. Fingers crossed!!! Beer will be on sale both in our retail store and online for curbside pickup and Ontario-wide shipping.... Ontario orders will ship out starting Monday September 21st. RED LETTER DAY is our annual IPA done in the West Coast style. Big and bold with huge citrus and floral aromatics, this IPA is full of bitterness with enough juicy and toasty malt flavours to balance. If ever you found yourself border-hopping to grab American IPA’s a moon or two ago, this beer is definitely up your alley. VIM AND VIGOR 5th Anniversary Special Edition is a delightful take on our German-inspired pilsner. We decided to take its German roots and add some Czech pizzaz by brewing it with Floor Malted Czech barley and dry hopping it with Czech Saaz hops. For an additional flavour twist, the beer has been left unfiltered and has been can-conditioned for a zippy, dry, champagne-like effervescence. We will keep you updated on the status of VIJFDE, and we thank you for your patience. It’s worth the wait.

Peche Day(s) are on their way While COVID-19 stripped us of the international festival that celebrates one of the world’s great beers, it didn’t strip us of the kegs that recently made their way to our doorstep. Starting Monday September 14th at 1pm, ONE KEG AT A TIME, we will be serving full (375ml) glasses of all six variants of Brasserie Dieu du Ciel Peche Mortel until all kegs are gone. Once one keg is spent, we will tap the next one, so on, and so forth.... For the next two weeks, we will open up our patio hours to allow for more of you to be able to enjoy these one-of-a-kind Imperial Coffee Stouts considered by many (including us) to be some of the best in the world. We are thrilled and honoured to release Black is Beautiful. This global collaborative effort, pioneered by Weathered Souls Brewing Co. in San Antonio Texas, was developed to raise awareness for the injustices that people of colour face daily, and to raise funds for police brutality reform and legal defenses for those who have been wronged. In the true spirit of the global craft brewing community, the initiative allowed for ample creativity in the brewing of this ale. Our vers...ion however stays true to the original recipe with small adaptations made for our brewing system. The result is a true to form American Imperial Stout, rich with deep flavours of chocolate fondue, French pressed coffee, and oatmeal cookies, all the while balanced by a firm and prominent Cascade hop bitterness. We have given this beer all of the time and patience it deserves, and we are thrilled with the results. 100% of the proceeds collected from our interpretation will be donated to Black Health Alliance, who will be using the funds to support their general operations as well as mental health support for Black children, youth, and families. While this donation doesn’t precisely fit the designated allocations set forth by Weathered Souls, we are confident that they will support us in our decision to give to this organization during what is a tumultuous time for us all, even more so for our Black communities. Please take a moment and check out Black Health Alliance to see what they’re all about. After all, your enjoyment of this beer is a direct donation to further support their important work.
