There has been very little good news lately, but we wanted to share good tidings and cheer with you before the mandated closure. We will be sharing our lockdown plans with you tomorrow. In November, we started a support project with The Mary Street Centre. We have been maintaining higher than normal staffing levels at the brewery to keep our staff working and gainfully employed. With some of these extra hours, we committed to paying our staff to go help prepare meals every T...uesday with Chef Jim and Rev Monica. Our staff enjoyed getting out of our place and supporting a worthwhile food program supporting our community. Veggies were chopped, meals were boxed for takeout and delivery, and dishes were washed! The last 2 years we also supported Harvest Share with our decorated six-pack carriers. Last year, about 25 volunteers from Harvest Share dropped into the brewery to decorate boxes and take part in some good cheer! We ask for $2 donations to Harvest Share for every decorated box going out the door. Every penny raised goes to Harvest Share! Many people make donations and do not take boxes which we are so heartened by! We have an incredibly giving community! It is truly one of the best parts of our approach to the holidays! This year that was not possible due to COVID restrictions but we did not want to let this program disappear, so Barbara recruited volunteers in the community to decorate the gift boxes in their homes. Big thanks go out to Phyllis Harris, Trudie and Joe Johnson, Elizabeth West, Sandra and Andrew Thomson, Joanne Richards, Gabe and Eli MacDonald, and The Jackson Family. We feel that Parry Sound Harvest Share and Mary Street Centre do very important work in our community and we encourage everyone and every business to support these organizations during what has been and will continue to be a very difficult winter here. What can you do to help this year? -Call and find out what their needs are for non-perishable foods, and other foods, and containers to support their meal programs -Volunteer to deliver meals or help with other tasks. Many hands make for light work! -Organize a fundraiser at your workplace in the New Year. The need is year round - not just now! -Write a cheque or drop off cash as they do not accept credit cards. Donations may not go just to food. They also go to keep the lights on and the doors open! We wish everyone the best for the holidays! Be kind to each other and yourselves! If we can all aim to reduce, by some small measure, pain or suffering in the world, that is a worthwhile endeavour and the world will be a little better off than before The Team at Trestle Brewing Company

Introducing the Mad King's Board! This dish is one of the stars of our Oktoberfest Menu that we bring out every fall for a few weeks to celebrate the season. Rust Never Sleeps! This beer is our favourite thing about fall. Our version of this traditional Bavarian lager focuses on hearty malt flavours of caramel with a balanced bitterness. This Sunday will be our first time since the spring offering our Brunch Menu from 10am-3pm. Many of our brunch favourites will be back along with some new additions! We will no longer be open Sunday evening and only the brunch menu will be available over lunch. 2. We are now only accepting reservations for seating indoors. We have an extremely limited number (4!) of tables inside that are well distanced. Outdoor seating will still be happening but for the time being we will no longer be taking reservations for it. It's just too difficult with the current weather. When the sun is shining, we'll be ready for you on a first come, first serve basis! BYOB (bring your own blanket!). 3. This coming Monday, October 19th we will be closed all day in the Taproom & Patio. We have a scheduled power outage for some new equipment to be installed.

The Giant Pretzel. It's back. Grain Harvest Bakery's giant baked pretzel (it is really really big!) served with homemade beer cheese sauce, house hot and sweet mustards and stacked with our house-made corned beef, black forest ham, Ontario cheeses, and assorted house pickles. It's time to introduce you to Chef Wes. Wes joined us early this summer to lead our Culinary Team and continue the development of our vision here at Trestle. Born and raised in Woodstock, Wes is a graduate of the George Brown Culinary Program who has been on a decade-long culinary journey following his graduation. He wanted to learn French cuisine, Italian cuisine, and the art of fermentation. So, he spent a year in France, a year in Italy, and completed an internship at Nom...a in Denmark (named the best restaurant in the world four times in the last decade). In between these adventures, he worked his way up at Sixthirtynine & Langdon Hall, two of the best farm-to-table restaurants in Ontario. Since arriving here, Wes has been improving our existing menu items while adding some of his own creations. Let's take our Reuben Sandwich as an example of improvement... We used to order corn beef. Now, we make it in house. Take brisket, brine it for four days, smoke it for four hours, before cooking it sous vide for 30 hours. Put in on marble rye with house-made 30, 000 Islands dressing, Swiss cheese, mustard & sauerkraut and you have one of the best sandwiches you'll ever have. Now we're experimenting with house-made mustard and fermenting our own sauerkraut. He likes to do things the right way. We can't wait for what he has planned this fall and we're lucky to have him. This Caprese Salad is beautiful. We're renewing our focus on using local seasonal ingredients in our menu wherever possible. This dish is a perfect example of that. Incredible heirloom tomatoes from Rob & Tish of Beaver Creek Organic Farm in Mckellar, buffalo mozzarella and house-made walnut garlic scape pesto made using their scapes! NEW BEER ALERT! is our low alcohol easy-drinking Micro IPA! At 3.5%, this beer is a testament that great flavour can fly well under 5%. Head Brewer Matt Lyons fuelled the flavour up with heaps of Idaho 7, Chinook & Saphir in the kettle before dry-hopping it with Australian Galaxy and Enigma. The artwork by local artist Don Corbett is inspired by a local legend that during the testing of the Iroquois engines scheduled to power the Avro Arrow, a test pilot in a CF-1...03 Sabrejet flew from Malton to Parry Sound for an Underpass of the CPR Trestle. This unconfirmed story inspired Don's depiction of the risky maneuver.
