Kale is a wonderful food with a multitude of benefits. It has over 45 different flavinoids in it ( beneficial as both an antioxidant and anti-inflammatory as well as rich in Vitamin K (important for helping calcium get to your bones), vit A, vit C, B6 as well as other important minerals like iron and calcium. What is the difference between the 2 bowls? Besides the colour, 1 bowl has been massaged and the other hasn't. Massaging (for 5-6 min) the kale breaks down the cellulose structure making it sweeter and silkier! I can't keep my 8 yr old from diving into the bowl. Makes making kale chips a lot more work. LOL!

Time to cook the beans. Discard the water they have been soaking in and rinse. Using fresh water, put beans in pot with water and boil softly. Skim off the foam on the top as you go. It is better to overcook the beans rather than undercook as they become really hard on our digestion if not cooked enough.

Soaking the quinoa. Why is it important to soak our beans, nuts and seeds? While phytic acid is important to the seed so that when animals ingest it, the seed doesn't sprout while working its way through the animal's digestion, it is detrimental to us unless we help with its breakdown. Phytic acid is the principal storage form of phosphorus. However, in animals with one stomach, the phosphorus is not readily bioavailable. As well, other minerals such as calcium, magnesium, iron and zinc become unavailable too. Phytic acid also inhibits enzymes that we need to digest out food. Remember to add in 1 tbsp raw apple cider vinegar to aid in the phytic acid breakdown when soaking your beans or seeds.

Our joint project was a smashing success! I LOVE this sunscreen, for more than the obvious reason that the ingredients are few and are organic/fair-trade. It feels amazing when it is on, you can feel the nourishment it is providing for the skin...I could use it even when NOT in the sun I like it this much!!
