New Year but the lockdown continues. Pondering on that sentence made me think of a blog posted by RetinaRisk titled: Tough but True: COVID-19 Lockdowns Resulted in Increased Diabetic Amputations. The blog spoke about a study involving 25 patients who were admitted from March 9th to May 18th, 2020, with 38 patients who were admitted for a longer period between January and May 2019. The results showed showed high numbers of emergent and serious cases in 2020. I quote:... " the COVID-19 lockdown seemed to have a detrimental impact on amputation risk because of the sudden interruption of diabetic foot ulcer care resulting in delayed diagnosis and treatment. The higher risk of amputation observed during COVID-19 lockdown confirms the need for proper and timely management of diabetic foot ulcer patients to prevent dramatic outcomes responsible for a reduction of quality of life and increased morbidity and mortality." With four more week remaining in lock down. I urge us to keep our dia-buddies in pray. Let us to continue to be their support in these difficult times. New Year New Dish? Try this colorful Mixed Grain and Roast Vegetable Salad Healthy side dish for a roast dinner! courtesy: www.taste.com.au ... INGREDIENTS: 300g eggplant, cut into 3cm pieces 1 bunch Dutch carrots, trimmed, peeled 1 large red capsicum, deseeded, thickly sliced 1 red onion, halved, cut into thin wedges 1 garlic clove, unpeeled Pinch of salt 75g (1/3 cup) cracked wheat, rinsed 100g (1/2 cup) tri-coloured quinoa, rinsed 185ml (3/4 cup) water 1 tablespoon white balsamic vinegar 1 tablespoon lemon juice 2 teaspoons extra virgin olive oil 1/2 teaspoon Dijon mustard 1/2 cup fresh continental parsley leaves METHOD Step 1 Preheat oven to 200C/180C fan forced. Line 2 baking trays with baking paper. Arrange vegetables and garlic on trays in 1 layer. Spray well with olive oil. Sprinkle with salt. Season with pepper. Roast, turning once, for 35 minutes or until golden and tender. Step 2 Meanwhile, place the wheat in a saucepan. Cover with cold water. Bring to boil over high heat. Reduce heat to medium. Simmer for 14 minutes or until tender. Drain. Refresh under cold running water. Drain well. Step 3 Place the quinoa and water in a saucepan. Bring to boil over medium heat. Reduce heat to low. Cook, stirring occasionally, for 10-12 minutes or until tender and liquid has absorbed. Refresh under cold running water. Drain well. Cool. Step 4 Squeeze the garlic into a bowl. Mash with a fork until smooth. Add vinegar, juice, oil and mustard. Season with pepper. Whisk. Step 5 Combine the vegies, wheat, quinoa and parsley in bowl. Drizzle with dressing.
