Alfalfa is a small legume native to Asia and often grown for grazing animals. Just like the Canadian buffaloberry from a couple posts ago, alfalfa is rich in "saponins". In large amounts saponins can irritate the stomach, however in lower concentrations they aid with cholesterol breakdown. The Canada Buffaloberry is a delicacy for bears, deer, and in some places eaten by people today. The berries have a distinctive bitter taste due to molecules called saponins; however indigenous groups often mixed them in with other berries or used them in pemmican to mask the taste. The saponins foam up when mixed and the berries can be whisked into a dense foam to create "Indian Ice Cream".
