It’s that time of year again! It is heavy processing season. While the store front is a big part of what we do. The processing plant is a huge part in the fall. This year we are juggling the pandemic on top of this so we really need everyone’s help to make this run as smooth as possible. Please make sure your custom/larger orders (primarily the items with a bone) are placed ahead of time. Otherwise they likely will not be able to be done same day. Just l...ike all of 2020 it seems, planning and replanning is what it’s all about. So send in your orders via email, shopping online or phone and we will gladly have your order ready! Curbside service is still here and we are happy to provide it for all of our customers who can’t or are not comfortable coming into the storefront. Happy Monday!!

Great question about marbling in meat. How much fat (marbling) is too much? Answer: It’s a personal preference. No real easy answer. Some people love the buttery finish and tender texture that the higher end more marbled steaks give you. Others like a leaner and firmer texture in their steak. Each cut of steak yields a different texture and flavour. It is all a personal preference ... I have attached some charts and explanations on how beef is graded. happy reading!
