Lamb's quarters is one of the most common edible weeds in gardens, backyards and fallow fields throughout most of the world. . It's one of my favorite edibles, ...with a tender texture that can be used in any dish where you would normally add spinach. In fact, some people call it wild spinach, and the two plants are botanically related. My favorite way to eat lamb's quarters is in quiche and omelets, but I also add it to stir-fries and soups. . Consider letting lamb's quarters grow in your gardenit's probably more nutritious than the planted vegetables. In fact, lamb's quarters has more fiber, beta-carotene, vitamin C, zinc, and calcium than cultivated spinach. Why would you weed out such a nutritious crop that doesn’t need pampering or insect control, to make room for less nutritious vegetables that are harder to grow? .
