We love our lazy Sundays and we bet you do too! Tracey has been telling us about this super tasty Crock Pot Roast Dinner recipe, and thought we would share. Let us know if you give this one a try! INGREDIENTS: - 3-pound boneless chuck roast - 1 tablespoon kosher salt... - 1 teaspoon black ground pepper - 2 tablespoons extra virgin olive oil - 1/4 cup balsamic vinegar - 2 cups beef stock - 1 tablespoon dried rosemary - 1 teaspoon garlic powder - 1 teaspoon onion powder - Handful fresh flat-leaf Italian parsley, chopped (optional garnish) INSTRUCTIONS: 1. Rinse the roast in cold water and pat dry with paper towels. Remove any hard fat. Season both sides of the roast with the salt and pepper. 2. Warm a Dutch oven or large heavy-bottomed pot over medium-high heat. 3. Add olive oil to the pot and sear both sides of the roast, about 3-5 minutes per side. I like to use a 6-quart oval for this recipe. 4. Remove the roast from the pot and place it in your slow cooker. Pour the balsamic vinegar, beef stock, rosemary, garlic powder, and onion powder into the pot. Bring to a boil. Stir occasionally, using a wooden spatula to scrape the browned bits from the bottom of the pot. 5. Once the liquid comes to a boil, pour into the slow cooker over the roast. Cover. Cook on high for 3 to 4 hours (until the roast is pull-apart tender) or 6-8 hours on low. When it is done the meat will pull apart with barely any effort. If you have to put muscle into it, let it cook another hour. 6. Use 2 forks to break the roast into chunks. Remove any large pieces of fat. 7. If you prefer to serve your roast in an au jus, it is ready to serve as is. Garnish with parsley if desired. Serve and enjoy! 8. OTHER: You can substitute the balsamic vinegar with red wine for a great twist on this recipe. 9. Add fresh onions, carrots, and potatoes as desired and cook on low in slow cooker for 7-8 hours. With the warmer weather rolling in, were dreaming of... seafood! Our wonderful client, Louisbourg Seafoods, has the most amazing Shrimp and Corn Chowder recipe, and were happy to share! INGREDIENTS:... 1 cup - 90/120 Cooked Shrimp 30 each - 90/120 Cooked Shrimp for garnish 4 cups - Vegetable or Fish Stock 2 cups - 35% Cream 2 cups - Frozen Corn Kernels 2 cups - Peeled and Medium-Diced Potatoes 1 cup - Finely Diced Onions 2/3 cup - Peeled and Finely Diced Carrots 2/3 cup - Finely Diced Celery 1/3 cup - All Purpose Flour 2 tbsp - Canola Oil 2 tbsp - Minced Garlic 1 tbsp - Unsalted Butter 12 sprigs - Chopped Thyme (save 6 sprigs for garnish) 2 whole - Bay Leaves Salt & Ground Pepper - to taste Cayenne Pepper - to taste Paprika - to taste Dried Parsley - to taste INSTRUCTIONS: 1. Heat oil in pot and sweat garlic, onions, carrots and celery until soft. Add potatoes, bay leaves and thyme sprigs. 2. Add stock and bring to a simmer. Cook until potatoes are tender approximately 5 to 10 minutes. 3. Melt butter in the pot and whisk in 1-1 tbsp flour to create a roux. Slowly add some stock and whisk until it has thickened. 4. Whisk the roux and chowder base and simmer until thickened about 10 to 20 minutes. 5. Add the cream, frozen corn and shrimp and simmer until heated through. 6. For Serving: Ladle some broth with lots of shrimp and vegetables into each bowl. 7. To Garnish: combine the remaining 1/4 cup of flour, cayenne, paprika, dried parsley. Coat each of the thirty shrimp. Pan-fry until crisp; approximately 1 minute on each side. Place five shrimp in the center of each bowl with a sprig of thyme. 8. Winner Winner Chicken Dinner Ingredients:... 4-6 chicken breast (bone in or boneless skinless) 1 Can of Cream of Chicken Soup (regular or low sodium) 1 Package of Onion Soup Mix 1 Box of StoveTop or Stuff nSuch Stuffing Mix Instructions: 1. Prepare the stuffing mix and set aside 2. Layer, in this order - chicken breast, cream of chicken soup, onion soup mix 3. Top off with the prepared stuffing 4. Cover with foil and bake at 375 degrees for one hour 5. Remove foil and bake an additional 15 minutes to crisp up the stuffing 6. Serve and enjoy Sounds tasty, right? Raise your hand if you love naan bread! As one of Neils top comfort foods, hes agreed to share his favourite recipe with you... INGREDIENTS: - 1 teaspoon sugar - 1/2 cup warm water... - 1/4 oz active dry yeast (2 1/4 teaspoons) - 2 1/4 cups all-purpose flour - 1/2 cup plain yogurt - 1/2 teaspoon salt - 1 tablespoon oil - some oil, for greasing the skillet - 3 tablespoons melted butter INTRUCTIONS: 1. In a small bowl, add the sugar, warm water, and yeast together. Stir to combine well. The yeast should be activated when it becomes foamy, about 10 minutes. Transfer the flour to a flat surface and make a well in the middle. Add the yeast mixture, yogurt, salt and oil, knead the dough until the surface becomes smooth and shiny, about 10 minutes. Cover the dough with a damp cloth and let it rise in a warm place (for example: beside the stovetop or warm oven). The dough should double in size, about 1 hour. 2. Divide the dough into 8 equal portions. Roll the dough to a 8 circle using a rolling spin. 3. Heat up a skillet (cast-iron preferred) over high heat and lightly grease the surface with some oil to avoid the dough from sticking to the skillet. Place the dough on the skillet. When it puffs up and bubbles and burnt spots appear, flip it over and cook the other side. Repeat the same until all dough are done. 4. Brush the naan with the melted butter and serve warm.
