With Chinese New Year just under a week away, it's been nothing short of crazy in our kitchen continuously making hundreds of New Year Cakes () from scratch. The english translation of "cake" is somewhat misleading as they more closely resemble a rice flour based pudding; they have an internal texture similar to mochi but are crispy and caramelized on the outside from a good pan-fry. I just learned that the mark of a great New Year cake needs to texturally be smooth, crisp...y and chewy without sticking to your teeth! Our cake base is gluten free; made with glutinous rice flour, coconut milk, molasses and sugar. This year we are offering 7 flavours: Traditional (what the Chinese simply call, "Red New Year Cake") Organic - made with coconut flour, unrefined coconut sugar, and coconut oil Red Bean Coconut Coconut with Water Chestnut Turnip (savory) Taro (savory) A heartfelt thank you to our amazing team for working tirelessly in the last few weeks to continue this New Year tradition!
