What's cooking Wednesday ?! Want to share this recipe today. I frequently make this on a Sunday as part of my weekly meal prep for additions to lunches. This is high in protein, fiber, stable saturated fat, mineral and vitamins. Making every bite count on the nutrient density scale, and keeping you satisfied till the next meal - this is a must try! ... Apple Quinoa Pancake Ingredients: -5 free range organic eggs -1 cup organic coconut milk (light or full fat) -1 scant cup organic quinoa flour -2 Tbsp unsulphured molasses -1 tsp sea salt -1 Tbsp organic cinnamon - cup organic coconut oil -2 organic apple, washed and cut into slices (leave the skin on for extra fiber and nutrients) Preparation: 1) Preheat the oven to 425 F, melt coconut oil in a baking dish in the preheating oven. 2) Add apples to melted coconut butter in the baking dish and return to the heated oven for about 5 mins until the apples begin to sizzle. Do not brown the apples. 3) In a bowl or blender add all other ingredients to make the batter 4) Pour batter over the sizzling apples and return to the oven to bake for a further 20-25 mins or until golden brown. Serve immediately, or let cool before storing in the fridge. Tips: This is super delicious topped with freshly ground ginger and a drizzle of raw honey, coconut yogurt, or your favourite nut/ seed butter. You can use oat flour or coconut flour instead of quinoa flour - all options are night in protein and fiber, giving a great nutty flavour. We have been speaking with a lot of clients who are reporting they feel more fatigued than usual, have lower energy levels and are concerned about their immune health. The fall season is one of many transitions, new schedules and possibly exposure to the elements and other individuals. We want to help you feel your best, stay healthy and energetic. There are many ways to accomplish this, with small lifestyle modifications you can implement today! First and foremost, getting a...dequate sleep is essential for our health - energy and immunity included. Sleep is the body’s opportunity to calibrate, do some internal cleaning of the oxidative stress from the day, consolidate memory and learning, as well as repair the body tissues. Are you getting enough sleep? Many people require at least 7 -8 hours of sleep each night. To help with this, reducing screen time and exposure to blue light a couple hours before bed is helpful. Sleeping in a dark, cool room also helps the body rest. Having a regular evening and morning routine also helps with proper deep sleep, as well as stress management. Stress not only makes it difficult to get a restful sleep, it also increases our levels of cortisol (the stress hormone) which reduces the immune capacity, and depletes the body of the essential nutrients and enzymes needed to orchestrate a strong healthy immune response. Second line of defence against fatigue and poor immunity is proper nutrition. As mentioned above, nutrients get depleted very quickly with stress. Eating for nutrient density is the best way to combat this effect. Consuming local organic produce or all colours and variety provide the body with many of the vitamins, minerals and enzymes needed for recovery and repairs of tissues in the body, proper immune cell function, and the synthesis of hormones in the body. Third line of defence is stress management. Again, stress speeds the body depletion of essential nutrients, shifts the body into a high cortisol state which affects insulin resistance, hormonal health and metabolism. Stress management techniques can be as simple as getting outside for a walk in nature, meditation or yoga practices, getting to bed early or chat
