After enjoying an herbal tea last night that helped me sleep, I needed a solid breakfast to start the day. It was simple, hardy and delicious! Sautéed tofu marinated 30 minutes in Organic Everything Bagel Seasoning, fresh lettuce (from my garden!) and topped with a little vegan mayo which was spiced with Tabasco and Organic IPA Seasoning. What a beautiful morning to enjoy breakfast outdoors! I felt inspired today so here’s an interesting twist on berry salad for all you food adventurers. I was recently gifted a jar of local honey from Haulin Honey and it is fabulous! 2 cups mixed berries (washed) For the dressing:... 1 tspn local honey 1/4 tspn rice vinegar 1 mint leaf, finely diced 3 drops of Watkins Pistachio extract Toppings: 1 tbsp hemp hearts 1 tbsp raw, hulled sunflower seeds Feel free to change up what doesn’t suit your palate but this combination is very satisfying.
